What's for dinner? Was it "budget"?

We had pot roast and it was so yummy! Can't say that too much about my own cooking. I bought it on sale for 1.79/lb and we have enough left over for tommorrow night. Linda :)
 
Thank you, Teresa. I am going to try those recipes. I have a lot of dehydrated TVP that I want to use up and they will come in handy.

This afternoon I made some miso soup. I bought a container full of miso paste and dashi stock, added wakame (dehydrated seaweed), water, and cubes of tofu.

It is my oldest daughter's turn to make dinner - she is 16yo. She is making some kind of parmigiana. Mmmm. :)
 
Great suggestions. I had to laugh because just before I sat down to DIS we had just finished dinner and we had the pork chops and Bush baked beans with a salad. Very tasty and filling. For tomorrow, I made a mexican lazagna. Tortillas (whole wheat), layered with fat free refried beans and salsa and a little shredded cheese on top. Pretty healthy and not too expensive. Things certainly are at an all time high. I try to shop the bargins, but stick to the two supermarkets that are a short distance apart. Also have a dollar tree and farmers market right next to the one store, so I try to get what I can at those stores. When I get time I'd like to read through the 78 pages of this great thread! Grammy
 
I'm another Bush beans fan. That's the only kind of baked beans I buy. :) I have never tried cooking pork chops with baked beans in the crockpot. I'll have to try that! I love this thread! I've gotten some great ideas here. Thanks you guys!

Tonight, we had leftovers from last night. It was nice to have a night off.

We might have shrimp salad tomorrow night. I got a really good deal on shrimp. It was cooked and peeled 90-120 count for around $2.50-3.50 per package. Then it was supposed to be BOGO on top of that! But it didn't ring up that way. :headache: In the long run, it was still a good deal. I may call them.

I get a lot of my recipes from www.recipezaar.com. It's my favorite cooking website. It has a similar feature as allrecipes, where the recipes are rated and people add comments on how they liked the dishes and variations that worked well. I'll have to check out the websites mentioned!
 

Grilled chicken breast .79 lb so maybe $1.50

Dinner= 3.75 with plenty of leftovers for DH's lunch

chicken breasts for .79 a lb??? Geez! We have chicken farms (perdue!) all downstate and it's still $2.99 a pound!! I paid $2.78 for a little less than a pound of chicken tenders tonight.

Maybe they were bone-in and still with skin, those tend to be less. . .

It was split chicken breast, bone in and skin on, but it is a fantastic deal. I take them home and take the skin off and debone them.

I am not great at deboning, so I toss the carcasses in a big pot of boiling water and then strip all the meat off the bones. Make great chicken salad or chicken noodle soup. I save some of the broth for other recipes. My cashew chicken recipe takes 3 cups, so I usually put it in 3 cup portions and freeze.

Then I package up the deboned, skinless breast in packages of four and the tenders all to gether. If I have an extra breast or two I toss them in the stock pot.

Today we had Spicy Chicken & Rice Cassarole -

Tenders from my .79 lb chicken breasts. $1.50
Rice .50
Rotel .89
Cream of Mushroom Soup (98% ff) .89
Cream of Chicken Soup (98% ff) .89
Cheese 8 oz - $1.19 (super deal! price matched at Walmart)
Onion .25
Taco Seasoning - ? I buy a big container @ Sams for $4.??
Total - $6.11 + Taco Seasoning

Ahhh! Mystery solved!! ( I am still annoyed that they trucked my chicken up from downstate and charged me an arm and a leg for it!!)

The last time I tried to de-bone a chicken, I almost de-fingered myself. They should give you chicken bone-in for FREE!!!
 
Last night we had boneless pork chops, mashed potatoes and corn. Gravy on top. Not healthy (or super budget) but REALLY good!

Tonight I'm drawing a blank. It needs to be fast, cheap and easy! Maybe BLT's or French Toast!
 
Here goes my budget meal:

.99 cent lb pork chops...bought 2.5 lbs

large can of black beans $1.29
Tomato .25
Onions .10
Cilantro from the yard
(or a can of pico de gallo .79)
Saute all together in pan.

White Rice .50

Black beans over white rice and a side of pork chops.....mmmm

Fed a family of 4 plus 2 lunches for me.....77 cents a plate!


I can also give you a variation of the beans for something different....

2 potatoes sliced par boiled in a 1/3 cup water...add pink beans, tomato, onions, cilantro and a 1/2 small can tomato sauce (and I add green olive, caper mix) add over white rice....mmmm!
 
Tonight we are having spaghetti.
Homemade spaghetti sauce, with a bag of store-bought meatballs (haven't the patience to make homemade meatballs today) simmered for a long time, then served over angel hair pasta with lots of shredded italian-blend cheese. Tossed salad and garlic bread as sides. :)
 
tonight is homemade mac & cheese....I am also going to steam some broccoli. Salad and fruit will be offered.

I was very disappointed in the roast yesterday for french dips. But I think it might have been, at least partially, cook error.

A couple of weeks ago we taste tested something at Costco...and while it was yummy...it wasn't $10 for less than a lb. yummy:upsidedow . It was meat with an asian sauce on it. From what I tasted I think I might be able to get close so I think that's what I am going to do tomorrow for supper with fried rice!
 
Not sure yet about tonight. I had dental work done (a crown) today, and I'm still numb. I think I need to make something soft. I'm thinking baked potatoes with chili and cheese. I really feel like getting some soup from Panera. But, after paying my dentist $900 today, it's not in the budget!
 
Back from Disney and getting into the swing of budget dining again...

Tonight is Pepper Steak over basmati rice, corn on the cob, and fresh fruit..

1/2 each green, orange, and red pepper $1.75

Hot Sauce - Dashes to taste
Rice Leftover in the pantry
6 ears corn $2.00
strawberries, cantelope, bananas, oranges, or apples.. $2.00

$10.75 which is very high for me but I will have leftovers of the pepper steak for at least 3 lunches..

The funny:laughing: thing is that the kids wanted this dinner as they are sick of eating out...
 
We had leftovers from yesterday so free! Well, not free, but in yesterdays calculations.
 
Another breakfast for dinner night here...but that is always a low budget option!

Scrambled eggs
Potatoes/onions/green peppers
Fruit Salad (banana, apple, grapes, orange)

I'd say less than $2.50...dinner for four.

We have two free Cold Stone coupons, and it's B1G1 free night. So, for dessert we'll get ice cream for four...for the price of one icecream! :yay:
 
hot dogs (1.50 + 0.50 for buns), macaroni and cheese (1.50 Velveeta shells and cheese), and oranges. (0.30) = 3.80 for me and DD. DH ate leftovers and I have 3 hot dogs and some macaroni to take for lunch at work for the rest of the week.
 
Tonight I'm making Creamy Burrito Casserole. I've never made it before, but it sounds good! Tortillas, ground beef, refried beans, taco seasoning, onion, sour cream, cream of mushroom soup, shredded taco cheese. I'm sure I'll have leftovers!
