Tonight we are having Easter dinner at my mom's house. I am taking the strawberry daiquiri cake (lost the rum extract and had to use Grand Marnier, what should I call it now?) and a Chocolate Kahlua pound cake. My mom is making turkey and dressing and a few other things. I can't wait!


ETA: Should I put the cake in the fridge and serve cold, or room temp?

I would call it Yummy and let it go at that! I like this kind of cake served from the fridge. Have a good meal with Mom.

Getting ready to take Ross to karate to teach his little kids class. He is excited as it is the Easter class and they hide eggs for the little dragons to find.

Your son is one special young man, I think! If I get a vote for the day I say watch TV. You need a quiet day.

Today we are celebrating Easter and Liam's birthday (birthdays in our house are usually month-long events...) at my ILs. I shudder to think what we will be eating, but as I told Beck, at least there will be wine. :thumbsup2

I am :lmao::lmao::lmao: because we have the same thing planned for tomorrow! My MIL invited us and I accepted but have been hearing so many complaints. My DD said she will not waste her precious points there and is threatening to bring a frozen dinner. My DIL is not saying much but is ticked that once again she goes and my DS is getting to stay home and eat something good. he has to work so he needs a "nap". We are trying to come up with something after at home. I hope that there will be wine:worship:

How are you feeling today?

We are going out shopping tonight. Kady says Pa and Nan are on a date and that she is going to tie our hands together :rotfl2:. I think we will have something out. I did make some amazing veggie soup and added a new pasta I saw that has 3 times the fiber as well as additional calcium.
 
I'm making a roasted chicken seasoned with pancetta, basil, oregano, and balsamic vinegar, roasting some potatoes in that same pan, and roasting some butternut squash. I'll probably make an arugula salad too.
 

I made sole stuffed with spinach, shallots and parmesan cheese, baked in a tomato, basil cream sauce; Beck's baked pasta alfredo (mostly for the kids...I had a few bites); sauteed spinach, and rolls. It was good, but when eating it, I couldn't believe how I had managed to make so many good foods so unhealthy! :laughing:

that sounds so good..i have been wanting to roast a chicken for a while now..i think that will have to be Wed night for me since Greg will actually be home for dinner that night.

WFD tonight: I think we are going out to our fave local Mexican place...mmm Fajitas and sangria..YUM!

Easter menu: we are going to my parent's house and my mom is doing a ham, potatoes, yams, rolls and i will be bringing green bean casserole...

I have been out in the cold last night and this am at bb practice so I am cold to the bone and still feeling icky.

I'm kinda reeling from the stress of the past 10 days. I couldn't go to Kyle's baseball game today, too much work. I did hire a permanent employee but she is doing the right thing and giving two weeks notice, not like my employee of 13 yrs.:sad1:

I love what Kady said about tying Pa & Nan's hands together!!:lmao:
 
:laughing: You know me well. Yes, I mostly winged it, although I based the stuffing on my mom's spinach gratin, and the tomato cream sauce is one I have made before. I referenced one of my seafood books for cooking time and temp for the fish. I can post the recipe if you want it.

Yeah, I figured you pulled that dish together from several different ones. That's usually the way I come up with things! Sort of like this recipe but a little of that one...;) Can you give me the basics, for the stuffing, time & temp on the fish roll?

I'm bummed out, Alexis (& her mom & dad) were going to come to my Aunt's for Easter but her Grandmother is coming in, so they'll be going to her Uncle's. Our other nieces Grandmother has cancer & is living with them, so we won't get to see them either. No little kids on Easter!! :sad1:

Hi All! I'm jealous of all the good food posted today and for tomorrow :sad1:. I'm not going anywhere for Easter again, this is just no fun! I made a WW friendly orange fluffy dessert and a sugar free orange jello dessert for tomorrow. I also made a WW friendly chicken salad and because I love deviled eggs for Easter but do not like them made ahead I made a deviled egg salad. I am not crazy about it though. We will have this tomorrow when we get home. I think Buddy's cousins will stop by but I am not sure.

Sheryl- I understand how you feel. I am not into the Holiday at all this year but look forward to watching Kady.

Kathy- If your newbie is doing the right thing by her employer you are going to be happy with her work ethic.

Hi all! I started out today thinking I would get my errands done early. You know the icky ones oil change and have the muffler looked at ( it just needs a new hanger) got the oil change done no problem. Everyone wants me to leave the car to just look at it, I must look like I like to walk 10 miles one way :laughing:

Tonight we are having steak and chicken, potatoes and salad. Tomorrow we are going to my Aunt's and Uncle, just a little gathering maybe just the 8 of us. I bringing an angel food cake with some mixed berries to serve on the side.

In the morning I am going to make some popovers and flavored butters (one strawberry and the other apple cinnamon) for my neighbors. It make me sound ambious doesn't it :rotfl2:
 
Sheryl -- I am sorry you won't be seeing Alexis tomorrow. Caili will be modeling a new dress, complete with hat, for my parents tomorrow. She also decked herself out today for my ILs, with an older, but still gorgeous, dress and a lot of sparkly jewelry.

Dinner was just as bad as I anticipated. We had turkey, which was okay, but only because I suggested taking it out of the oven. My FIL was convinced it wasn't cooked, and even when he was cutting into it and the juices were clear, he thought it was underdone because it wasn't falling apart. Is it supposed to do that?

Sides were stuffing (mushy, gray and unidentifiable), mashed potatoes (unsalted), roasted asparagus (cold because they sat on the table for 15 minutes before everything else was ready), and broccoli (kind of brown :confused3 ). However, by far, the worst part was the gravy. I went to pour some on my meat and only fat came out of the gravy bowl. Anyone who knows me knows how much I love gravy. I didn't eat any.

I will be having a snack later!

Here's the sole recipe (it sounds like a lot of steps, but it took less than 15 minutes to pull this together, plus the 12-15 minutes baking time):

Spinach Stuffed Sole with Tomato Cream Sauce (serves 2-4, depending on size of sole fillets)

Preheat the oven to 400.

For the cream sauce:

1 tbsp butter
1/2 shallot, finely chopped
2 cloves garlic, finely chopped
2-3 small tomatoes, diced (I used campari, if you use cherry or grape, you would need more, regular tomatoes, less.)
1/2 tsp dried basil
2 tbsp heavy cream
salt and pepper to taste

Heat butter in pan until melted. Add shallots and garlic and cook until soft and fragrant...1-2 minutes. Add tomatoes and cook on low heat until softened and can break apart...about 3 minutes. Add basil, salt and pepper and cream. Stir to heat through then set aside. (If the sauce is too thick, you can thin it with milk, white wine or even more butter!)

For stuffing:

1 tbsp butter
1/2 shallot, finely chopped
2 handfuls spinach
1/4 c parmesan cheese, grated

Heat butter in pan until melted. Add shallots, and cook until starting to soften, 1-2 minutes. Add spinach and cook until wilted. Remove from pan and coarsely chop. Put in another bowl and stir in parmesan cheese.

For fish:

2-4 fillets of sole or other flat fish such as flounder
milk
breadcrumbs, either pre-seasoned, or you can add salt and pepper and other seasonings yourself
butter

Rinse the fish and pat dry. Place some of the spinach filling in the center of the fillet, then fold the ends over each other. Dip the sole in the milk and then in the breadcrumbs. Repeat for each fillet.

Pour the cream sauce into a baking dish, put stuffed fish, seams down, on top and top each fillet with a little butter. Bake for 14 minutes or until flaky and opaque. Garnish with parsley or chives.
 
Hi Ladies!

WFD- tonight we had ribeyes on the grill with sauteed baby bellas, dinner rolls, and stringbeans.

I also made a Jello Poke Cake to bring to my SIL, at the request of my DN. Simple but a huge hit with the kids.

I only have a second becuase John is setting up Enchanted. Our dinner was just OK. I bought a different kind of chicken and it was tougher than usual. I'm all about the free range and organic, but I was not thrilled with this chicken.

I have fried the bacon, and taken it out of the grease and set aside. Then placed previously blanched green beans into the grease to warm up. and added bacon last.

This is a great green bean & bacon recipe! My DSS loved them!

One pound fresh green beans
1/4 cup sugar
1/2 cup vinegar
1 onion
8 strips bacon

Slice onion thin. Cut bacon into small pieces. Cook onion and bacon until bacon is cooked and onion is transparent. Remove bacon and onion with a slotted spoon and leave drippings in skillet.

Add vinegar and sugar to drippings and let boil for a few minutes. Add green beans which have been previously blanched and heat through. Remove to serving dish and then top with bacon and onion mixture.

I just took out my Angel cake and it's cooling. I decided to make a english muffin bread instead of the popovers for the morning. I found a recipe for my bread machine. I have to stay up for a while since I didn't start it earlier.:guilty:
 
Today we are having leftovers from my mom's house. We had: turkey, dressing, mashed potatoes ad gravy, homemade mac and cheese, slaw, corn, squash, green beans, and cranberry sauce. Boy was it yummy!
