We're having roast chicken (courtesy of Costco), salad and probably some kind of potato.

If it's not raining, grilled porkchops and either broccoli or beans. Laying off the carbs (or trying to anyway) and sugar free ice cream for dessert.

Mexican food is in the crockpot. I'm doing easy stuff this week, since I'm helping my kids study for their finals.

I'm going to try my hand at "Zucchini Boats". I saw the recipe in FamilyFun magazine. They look so good!! It has lots of diced tomatoes, mushrooms, Parmesan cheese and bacon on it, so I'll probably just serve some Texas toast with it. Here goes!

Brownies and ice cream for desert.
