What's a good light recipe for leftover chicken?

My husband cooked a bunch of chicken on the grill tonight because he thought more people were going to be home eating. So now I have a bunch of chicken left and nobody likes leftover grilled chicken.

One of my kids is having a guest over tomorrow but she's on a diet and trying to eat healthy. Any suggestions for a tasty healthy dinner with the leftover chicken as an ingredient?

slice it really thin and make corn enchildas either can make own sauce or we like the ole el paso or could slice it even smaller and make tacos and have the fixings for that. or have a big salad and cut into cubes or slice it add to the salad. for the tacos could use wheat tortillas be healthier as well:thumbsup2
 
Grilled Chicken Asian Salad

Slice thinly over a bed of greens and or slaw mix, garnish with mandarin oranges, slivered roasted almonds and either chinese dried noodles or dry top ramen noodles. Make an easy vinagrette using rice vinegar, little bit of sugar, sesame or olive oil and some soy sauce. Sprinkle with sesame seeds.

Wraps

For fancy buy the green spinach or roasted tomatoe wraps. Otherwise just use large flour tortillas. Wrap up thinly sliced chicken, slaw mix and your choice of condiments. (Hidden Valley Cole Slaw dressing is good or the above asian dressing.) You can add roasted cashews or chopped peanuts. anything goes in a wrap even leftover rice! Southwestern style is good too with a spicy ranch dressing and or cilantro and lime!

You can make quesadillas filled with sliced chicken and grilled veggies. Use a small amount of cheese so it's healthy.
 

Chicken Tacos with a nice corn relish and lettuce and cheese. She can make her own that way and choose what she wants to eat-just the insides or with a shell. We had chicken taco salads just last night from leftevers. I chopped a little cabbage, made a corn/tomatoes and onion relish(call it salasa) and got some low(never NO) fat cheese, avacaado slices, and other little leftovers in a bowl that came from my fridge but made good taco salad.

Believe it or not, I was thinking about having the tacos! The idea came to me after I posted this, but thanks anyway!:) The whole wheat tortillas are a good idea.
 
I love leftover grilled chicken...so many options. :)

Chicken enchiladas, chicken wraps, chicken salad, chicken tacos, pasta with chicken and alfredo sauce.........

I have leftover chicken right now, we did BBQ chicken sandwiches one night and enchiladas another night, I'm going to have to freeze the rest to use later because I just won't have it eaten in time.
