B&C wouldn't be my first choice.

To be honest, I've never been impressed with lunch-time options at any of the resorts, with the exception of the rare times they open California Grill for lunch. I do like the idea of taking a long break from the parks midday, even if it is just to take the boat from D-MGM to Epcot, and head into Epcot for lunch (assuming you have park-hopping), and then back to D-MGM. Of course, my choices for lunch in Epcot might not jive with your tastes -- we've recently been eating lunch at the Matsunoma Lounge (for sushi). Rose & Crown is an interesting place to have lunch. It's far easier to get a table on the terrace for lunch than for dinner, and if the weather is nice it is so great to be able to eat a leisurely lunch outdoors. Chefs de France is another place which I like for lunch. I don't know -- maybe I just like seeing the sun as long as its in the sky, that I eschew having lunch in a restaurant where I can't readily see outside (such as is the case at Le Cellier, Biergarten, San Angel, Mama Melrose, Brown Derby, etc.)
I don't want to slight Spoodles, but lunch-time at Spoodles wouldn't be my preference. I'd almost prefer to do an early dinner, there, and then plan on heading back to D-MGM for Fantasmic. For lunch on the BoardWalk, I'd tend to lean towards a burger at the Big River Grille.
You mentioned Mama Melrose -- I've had my concerns about Mama Melrose. I'll just say that I feel that there are far better places to get Italian food at WDW, such as Palio. Brown Derby is, of course, very good, and a wonderful break mid-day for us. Of course, we've had to cut down on the Cobb Salads since we've made our health a major priority.
