What would you do with a chicken carcass?

I bought a yummy rotesseire chicken from Sam's Club for dinner yesterday and now the rest of him is sitting in the fridge waiting to be made into something. There is still plenty of meat on him, but not the type that you can slice off and eat.

Any thoughts on what I can do with the chicken carcass? Unfortunately it is still "soup weather" in Cincinnati.

throw it in a pot of water with a couple of bouillion cubes in it and a few carrots and celery, let it cook for an hour or so and strain the broth pick the meat off the bones put it all back in the pot with a bag of noodles and you have some yummy chicken and noodles.
 

I would weigh it down with chains and bricks, take it by boat a few miles offshore and dump it

As my DH would say - get some Raimes Noodles and make chickie nu nu.

cover with water. add chicken boullion, some carrots, celery, onion, and (optional) minced garlic. when the chicken is done, pick chicken off bones. put back in broth. in small bowl, mix one cup flour, one egg, dash salt, and a dash pepper. mix until crumbly. add to broth. add about 2 or three flour/egg mixes. simmer for about 30 mins or until crumbles are cooked thoroughly. it will thicken. i love these! we call them rivvles. mmmmmmmmm. i wish it was cool enough here to make some.

My recipe for chicken and dumplings is a lot like Worm761's recipe. The only difference to the broth I'd make is that I would saute the carrots, onions, and garlic in olive oil before I added the other stuff. I'd have to look up a real recipe for dumplings, but I think it's mainly flour, fat, milk, and baking powder or soda or something for leavening. They cook for about 10-20 minutes.
 
This reminds me of my new Northern BIL's first Thanksgiving in the South. He was trying to be helpful, with all the leftovers being put away... so he picked up the platter with the Turkey carcass and headed outside to throw in the garbage.

All of the women shreiked ...
"NO!!!!"

We all wanted "dibbs" on the carcass to make turkey gumbo the next day. :D :tongue:

Notice my tag, my brother and I use to fight over who got the turkey carcass each year!!! Now I just cook my own turkey when I want broth. Let us know how you used it!!
