There aren't as many of my favorite spots inside the parks, but I often book meals at favorite restaurants just outside each park that are easily accessible walking or by boat/monorail...sometimes I even head back to the parks after dinner for fireworks/etc.
For MK - no true favorites in the park - though I often eat at Liberty Tree just because it's plentiful and filling and an old family tradition. On MK days, I more often head to Steakhouse 71 at Contemporary, or if more casual fare, Geyser Point at Wilderness Lodge.
For Epcot, I always enjoy San Angel Inn, Via Napoli, and Le Cellier in the parks though I wouldn't rank them as 'top dining experiences' - if I want something more upscale, Cake Bake Shop in Boardwalk, Yachtsman Steakhouse in Yacht Club, and Topolino's at Riviera are favorites within walking/Skyliner distance. Rosa Mexicano, Il Mulino, and Trattoria Al Forno are all decent options on the more casual side.
For Animal Kingdom, Tiffin's is the top in-park choice...because it's a more disconnected park there are no easy walking resorts nearby - though on AK day, I often drive over to AK Lodge, bus to AK, then bus back, eat at Jiko (definitely one of my top 1-2 restaurants at WDW), and drive back to my resort from there. Another option on driving back is to pop into Coronado and eat at Toledo, another nice upscale spot.
For DHS day, there's some overlap with Epcot, as I can hit Cake Bake, Yachtsman, and Topolino's easily from there too. Brown Derby is decent, though I wouldn't put it at the top dining experiences.
And I often choose to go to Disney Springs on some park days, because there are so many good choices over there. Art Smith's Homecomin' is a favorite, Morimoto is very good too. Summer House, Boathouse, Wine Bar George, Enzo's Hideaway are all regulars for me too. On the casual side, sometimes just getting a D-luxe Burger, BBQ at Polite Pig, southern/Cajun at House of Blues, Mexican at Frontera Cocina - all good options. And when staying at Saratoga Springs, Turf Club can be a good surprise - over many years, I've had some very good meals there, some so-so meals there, and back to good again - it depends on the chef and whether they're going through a phase with more interesting menu choices or dumbing it down to kid-fare. Last year, I found the new chef had made it a good secret spot for a very decent meal again - hopefully they'll stick around a while.
