Actually, at that time the DTD restaurants probably aren't that busy so you could potentially eat a sit down dinner at House of Blues, for example. But for counter service, I'd probably go with Wolfgang Puck Express. Pricey, but quality!
Can't really help you with the counter restaurants at DTD. What about sitting at the bar at Cap 'n' Jacks. We did that one time before Cirque Du Solei and we were in and out in under an hour.
We enjoy the outside Cuban cafe attached to Bongo's- good Cuban sandwich and some coffee that will have the whites of your eyes showing for a couple of hours!
We also have done well eating at the bar at HOB before La Nouba.
I have to second Wolfgang Puck Express for a quick one. We've always had pizza (about $9 for a pizza big enough for two light eaters, 1 1/2 normals eaters, or a Scoobie Snack for me!), but they had soup, salads, etc.
My very favorite would be inside DisneyQuest. But you have to have DQ admission to go in there. Which really bums me out since I don't like to go to DQ, but I love the food there. And I normally get a regular annual pass instead of a premium.
