What to serve with loaded baked potatoes?

Have a group of friends coming tomorrow night for a get together. We do very informal dinners. They've requested loaded baked potatoes. Great, but what can I serve with it? Nothing comes to mind other than bread and butter. :confused3
 
I would want a vegetable or protein. What do you put in your loaded potatoes?
 
I would do a salad and either grilled chicken or steak depending on your budget.
 
All these suggestions sound great. The loaded baked potatoes are really a meal in themselves. There will be bacon, chopped ham and a hot ground beef mixture with onions and bell peppers, sour cream, black olives, 2 different shredded cheeses (hot & mild) black beans...probably a couple small things I've forgotten. Really...a meal in itself. I just want "something" extra to serve along with the potato. Will be dessert afterward...no idea what as of yet. ;)

ETA: I'm not dumping all this stuff on the potatoes myself for everyone to try and eat.:crazy2: Will be set up as a bar for everyone to select their own toppings.
 
We have loaded baked potatoes for supper sometimes and that is a meal to us. We used to have a baked potato place in our mall a long time ago and we kind of got ideas from there. My husband likes melted cheese, broccoli and bacon on his. My son does butter and bacon, and I have shredded cheddar, sour cream, butter and bacon. I've seen people do pepperoni and cheese, taco potato, chili and cheese and roasted veggies. A buffet bar with a variety of toppings along with larger potatoes would provide a meal. If you want more than potatoes you could serve soup on the side.
 
Great topic!! I love the ideas OP of what you offer as toppings. If you feel you need something else I would offer a garden salad.
 
Maybe an assortment of steamed veggies to add to the tater or a green salad. I did potato bars for years with DS's football team, huge hit. The boys never touched the salad, only did that once but they liked steamed broccoli and zucchini to add to their taters.
 
How about cut up fruit? The potatoes are a meal, maybe offer some broccoli or something to add in more veges but if I was going to a dinner with loaded baked potatoes, I would not expect to see anything else. I wouldn't serve bread, too much starch already.

That's the whole meal?? how about some cut up chicken, broccoli, scallions. That's all stuff I get on them when the potatoes are a side dish.
 
I would probably do a big salad. Big bowl of lettuce (we use romaine but whatever you like) and maybe toss in some spinach. Put tomatoes, cucumbers, cheese, carrots, cauliflower, broccoli, whatever else you like or you know your friends like, in bowls so people can fix their own salad.

I also like the idea of fruit.
 
LOVE potato bars. Mostly see them served with a green salad and often fruit though any dessert works too!
 
I love baked potatoes for a meal. It really is a complete meal but I would serve a basic green salad with it, nothing fancy as to not compete with the potato toppings.

My favorite potato toppings are cheese, broccoli, bacon and chives/green onions or chili and cheese (both types with Greek yogurt on top). Your choices sound great also.

I would love to go to a baked potato dinner! Have fun!
 
We do loaded potatoes for dinner once or twice a month. I will usually make a nice refreshing caprese salad to go with it. It adds a nice creamy soft texture with the potatoes and toppings.

Well yeah, I could add chicken. Already have ham, crumbled bacon and am making ground beef with onions and red bell peppers, but sure...chicken too.:thumbsup2
