I want to make chicken satay for dinner tonight but don't know what to serve with it? I have made this many times before with the spicy peanut dipping sauce but have always made it as an appetizer. Any suggestions?
We just had chicken satay last night! It combines three of the girls' favorite things - chicken nuggets, food on a stick, and peanut butter.
Except I copped out and made it with one of those bag-o'-rice-and-stuff sides. But hey, it worked! We actually made it once with a rice noodle dish, but that didn't go over as well. My husband and I like it a lot though!
At Cheeseburger in Paradise, they serve it with Pineapple Rice Pilaf. Very tasty, but I don't know how to make it. If your interested, maybe try googling for a recipe.
I usually do Satay with rice, Tom Kha soup (chicken with coconut milk and curry), and Nam Sod (a ground pork dish served over lettuce leaves). I love Thai food!!
I'd jazz up regular rice by using chicken stock/aromatics--maybe a little finely diced sauteed onion/celery/carrot mix) or chicken stock/fruit--raisins or any diced dried fruit, crushed pineapple or diced apple.
Something green--green beans w/almonds? Broccoli stalks (we always just called them little trees and the kids ate them!) or a tossed salad with ginger dressing. <<----I LOVE the ginger dressing you get at Oriental restaurants!
