What to make with bar-b-que pork roast?

I have one hour until dh will be home from work, I made a nice bbq port roast today. Now I am not sure what to make with it. It is a rainy day here and I know dh sure would like to come home to a nice dinner!

I was thinking of maybe mashed potato and a veggie.

Mashed potatoes sound good... Comfort food! I like mayonnaise slaw with pork roast, too.

Can I come to your house for dinner? I'll make a peach cobbler or banana pudding and bring it over!

I decided on mashed potato, broc. cauliflower, carrots in a cheese sauce for my veggie! Nice meal for a rainy day! Now to start to think about tomorrow night's meal..

I am roasting a pork loin for lunch tomorrow. I think baked potato, salad, sliced apples. Simple and not too time consuming.

What do you do with your leftover pork? (btw, one day last fall, my naughty beagle ate the left over pork roast that was on the counter!)

Hi

My beagle Sam is a big guy. He can jump pretty high and that's exactly what he did. Jumped and grabbed the roast right off the plate! He was a happy beagle that night, LOL.
