Definitely keep the trip. As others have pointed out, your girlfriend won't "miss" either attraction because she's never experienced them before. And with Space, Splash, Mine Train, RnRoller Coaster, Everest, Tower of Terror, and Test Track, there are plenty of "big" rides to enjoy.

I agree with keeping dates as is and not spending the extra to switch to a later time. What if you change your dates just for those two rides for them to both break down for the day you were planning to ride them?
 

I will never book any airline other than SW.

Long story but I had to rebook one leg of another carrier home earlier. Thank goodness I hadn't booked round trip. It was cheaper to purchase a SW seat outright than pay the change fee and price difference so we just ate the ticket price.
 
Go. If SHE loves the trip, return with her as your wife.
If she is mad that BTMRR and Soarin are closed, then that's one less girl in the world for you to screen as your future wife.
 
Yeah, just pretend as if those rides went down unexpectedly: the first THREE trips I took after 7DMT opened it was down (and I had FP+ for it). For just $200 - considering the huge total cost of a Disney trip - if its easy enough for you to change dates (get off work, get the same hotel discount/availability), I would look into that. But if its more trouble than just the $200 to change dates, just see it as destiny that you'll need to book a bounceback and return for another trip soon.
