What to do with Ground Beef

OK, I swear I do more than shamelessly solicit for recipes here :lmao:

I'm just having a hard time choosing recipes online to try so I'm looking for BTDT ideas.

I have 2lbs of ground beef in the freezer that I want to use this week. I'll have to use it midweek so I'm looking for ideas that are somewhat simple and don't cook for a long time. We've already had meatloaf and tacos and I'm making lasagna next weekend so those are out. I would love to hear your favorite recipes using ground beef.

I make a bacon cheese burger skillet: brown ground beef and add: american cheese, bacon (already cooked and chopped), onions, mushrooms and any other toppings you like.

I also make what we call beefy mac: ground beef (browned) and add: couple cans of chopped tomatoes, kidney beans, onions, garlic, and elbow macaroni (already cooked)

Chili
Sloppy joes
Meatloaf
Stuffed peppers or cabbage
 
Taco soup. It's super easy and really good.

Ingredients
2 pounds ground beef
1 package taco seasoning mix
1 1/2 cups water
1 can black beans, undrained
1 can pinto beans, rinsed and drained
2 cans diced tomatoes with green chile peppers (Rotel original)
1 can chopped green chilies
1 package ranch salad dressing mix
Directions
1.In a large kettle, cook beef over medium heat until no longer pink; drain. Add taco seasoning and mix well. Stir in remaining ingredients. Simmer, uncovered, for 15 minutes or until heated through, stirring occasionally.


If I don't have the ranch dressing packet, I leave it out and it's just as good.
Serve it with sour cream, cheddar cheese and lots of avocado.
 

I saw this one in a magazine and tried it, we really liked it. Mix ground beef with seasonings of your choice and chopped onion. Then form into patties and fry. Drain grease and add 1-2 cans (I use 1 can for 1 lb. ground beef) Campbell's french onion soup (undiluted). Let simmer for 10 minutes or so, then add flour or cornstarch and water to thicken (like thickening gravy). Gives burgers a whole new flavor!~:)~
 
My first choice is a pound or 2 of meatballs fried in oil which can be drained on paper towels and then frozen and stored in a ziplock bag for a month or 2 and pulled out as needed to be added to tomato sauce and spaghetti or made into hot sandwiches. I love my MIL's version but Tyler Florence's is pretty darn close.

Tyler Florence's stuffed cabbage is the best and Taste of Home's stuffed peppers is my pick.

Also, today I happened to notice Taste of Home had a yummy looking recipe for Ground Beef Wellington.
 
Stroganoff, chili, burgers, or sloppy joe casserole.
 
Tacos, Chili, spaghetti
 
1 lb browned ground beef, drained.
1 8oz jar salsa
1 can can cheddar cheese soup
1 8oz box of whatever noodles you like. I have used shells or elbow macaroni. Boiled and drained.

Combine all ingredients. Heat and serve.
