What to do with dry left-over roast?

Yesterday my father put a tiny roast in their "crock pot" - at least that's what he calls it...it's one of those metal pans that sits on a heating element that reminds me of a griddle. KWIM?

Anyway, he followed my older sister's directions and the roast came out extremely dry. Now keep in mind that my father likes his meat dry - so this must be awful! DSis told him not to add water & can't understand why they don't eat it with ketchup. Tuck!

Anyway, I need some ideas on how I might salvage what's left. My mother is on a low-sodium diet - so low sodium if possible. :confused3
 
This has happened to me before.... forgot it in the oven!!!! I just chopped it up into small cubes (very small) and made stew. The long cooking time in liquid kinda revived it. Not as good as usual, but at least we didn't waste a whole roast. Hope this helps!
 
Don't recall you saying what kind of roast but assuming it's beef or pork, shred it, add sauce and make barbecue or loose meat or whatever they call it.
 
Sorry - I always call a beef roast just "roast" and pork roast is - well, "pork roast" :rotfl: Sometimes I just don't think!

Anyway, if it was for us I'd probably have shredded it & made "barbeque" as Momeska suggested. However, my parents are elderly & don't eat much with spices. Cooking for them has become a real challenge.

I was thinking of maybe trying to make a stew out of it. I picked up a can of low-sodium beef broth and will try to do it with that.

You can chop it up or grind it or shred it, whichever you prefer, and add salad dressing and use it for sandwich meat. You can add chopped onion if you wish. That is usually what I do with left over roast or with the pieces that are a little harder.
 
I'd go with the potatoes and onion in a blender and do hash. Yummy.
