What to do with Chicken leg quarters?

A grocery store I frequent has chicken leg quarters on sale for $0.39/ib. They are usually sold in 3-6 pound bags. They seem to have this sale about once every few months, but I've never purchased them. Due to extra holiday spending, I am thinkiof buying a bag or 2 tomorrow. I was thinking of making up a large pot of chicken soup to freeze in individual servings. Also baking up some to shred and freeze for future meals. What else can I make with this chicken?
 
I prefer white meat so I use chicken leg quarters for chicken soup.
 
Chicken salad? Barbecued chicken?

Ohhh. I didn't think if chicken salad. If I was to make chicken salad on Sunday night, how far into the week could I safely eat it for lunch? Wednesday?
 

Chicken Tacos (recipe from another disboards thread)
1 lb frozen shredded chicken
1 tsp. fajita seaoning
1 can rotel (or diced tomatoes)

Simmer in crockpot for 2-4 hours. Serve on tortillas. Top with sour cream and cheese.
 
Most kids love drumsticks so you could always cut the legs off and save them for the kids. Sure kids will eat chicken breast, but many kids will devour a chicken leg simply because they can easily pick it up. Freeze the legs in servings adequate for your kids and then when you cook breasts/wings for the adults you can easily take out legs for the kiddos.

Thighs are great for recipes that call for shredded chicken. Think tacos. If you are a bit of a cook you could boil the chicken thighs and then debone, throw the deboned chicken in a food processor and COARSLEY chop and then substitue in spaghetti sauce for ground beef to bring the fat count WAY down!
 
Hawaiian Chicken
1 c. soy sauce
1/2 c. vinegar
1 1/2 c. white sugar
4 tsp. corn starch
dash garlic powder
1 1/2 tsp. ginger
1 can chunk pineapple with juice
Boil until slightly thickened.
Place chicken in 13X9 pan.Pour sauce over chicken. Bake at 350º one hour. Serve over rice. Yummy!
 
Use them for anything that you would use some casserole diced up chicken for. I will often pick them up and cook them for cassoroles. One our favorites includes Chicken brushetta bake

I usually break mine in half. The thigh's I put in Gumbo and in Red Gravy ( I cut out the extra fat and boil them in water with garlic, onion and some other spices I have on hand). My DD's like the leg's baked, I put some mustard and black pepper on them and bake (this is how their school makes them and the cafeteria lady told me what they put on them).
 
We just put them on a baking sheet and put salt, pepper, garlic powder and just bake them at 375. The skin gets nice and crispy. It isn't the healthiest that way with the skin on, but they are delicious. We serve these with potatoes they get cut up into chunks in baking pan, drizzled with oil and spices and we cook them at the same time. We also have a garden salad.
 
When i find a sale like you mentioned i usually find it in 10 pound bags. i take the skin off and precook some of it in my crockpot. i then let the meat cool, and take it off the bone and put it in freezer bags. this will make the meat ready for things like casseroles,soup, buffalo chicken dip, chicken salad etc.. then the rest of it i separate the thigh from the leg. with some of the meat i place it in freezer bags and pour marinade over it. i put it in the fridge to thaw and while it thaws the meat is marinated. i then throw it on the grill with some sides and dinner is done. the rest of it gets thrown in freezer bags just plain. these are used for fried or baked chicken.
 
We just bake some them and eat them just the way they are then shred the rest for tacos, curry, or whatever other dish you fancy that uses chunks of chicken.
 
I cook them in the crockpot with some chicken broth for moisture then let it cool and take it off the bone and discard the skin. I use that chicken for chicken pie. I buy a pie crust- mix the chicken with cream of chicken soup (don't add water or milk) and then add some frozen peas- put it all in the pie shell and cover with the top crust. Super good- and it heats up well in the microwave later!
 
I take the skin off, put them in a baking dish and cover them with lowfat Italian dressing. I add a few pats of margarine, which helps the dressing adhere to the chicken and bake them at 350 degrees for about an hour. DH, who isn't a big fan of dark meat chicken, likes this dish a lot.
