What to do with boiled eggs?

Happy Easter everyone! At home today with a sick child so trying to do some useful things like plan menus while he's sleeping. I've googled recipes for the boiled eggs we dyed yesterday, and there are some pretty weird recipes out there (oatmeal cookies... with boiled eggs??) All I can think of is egg/tuna/chicken salad sandwiches, or just chopping them for salads.

What do you do with them??
 
I made scotch eggs with them this morning...never actually had them before so I looked up a few recipes and thought they came out decent for my first try, though I don't see myself making them again anytime soon...I could just hear my cholesterol levels rising as I sat down to a boiled egg wrapped in sausage rolled in bread crumbs and fried
 
Deviled Eggs (my boys love these), Pickled Eggs, Egg Salad, eggs in a salad
I saw boiled eggs baked in the middle of a meatloaf once

I've never heard of these, but they sound delicious! I looked on allrecipes and found a baked version... I will definitely try them for a few of the eggs. Now, need ideas for the other 20 or so eggs we'll still have :rolleyes1

I'd make deviled eggs!

I also make potato salad and dice up the hard boiled eggs and add them to the potato salad. :thumbsup2
 
Red beet eggs or pickled eggs. They will keep for a long time. It takes about 2-4 weeks to pickle them. And can be stored for 3-4 months.
 
we are boring we just eat them hard boiled. I send them to school with the kids for lunch or snack...
 
First things that came to mind were , eat them whole, mash them up for egg salad sandwiches, and chop them to add to salads.:)
 
Yes, eggs have cholesterol - but they also provide protein. Two to three per week on a regular basis would be part of a healthy diet; seemingly 'overdoing' it one week isn't going to be harmful overall to most people. Admittedly, I'm not a physician and I haven't stayed at a Holiday Inn Express recently - so someone with a high HDL number shouldn't take my advice.
 
I make egg salad, devil eggs and just eat plain boil eggs. When I actually get one because the kids and my mom eat them like candy. LOL
 
We eat the whites. Like a dozen a day (there are 3 of us that like them)

You could also feed them to your dog (if you have one) they make their coat super-shiny!
 
For decades I looked forward to using the left over dyed eggs to add to the pickled eggs. I would use beets. A can of sliced beets, about half cup of sugar and half of vinegar, maybe a 1/3 I nerve did measure the old recipes.

Place in a pot, with sliced onions, bring to a simmer for half an hour or so.

Peel the eggs into a tall container or Jar. Keep an old pickle jar or if you have one of the Tupperware containers mix the eggs, then beets, then eggs then beats. make sure the eggs are covered with juice. I let them sit over night to get the great color.

Somewhere I saw yellow eggs too, maybe they use mustard?
 
Easy Red Beet Eggs: buy 2 jars of pickled sliced beets, in a jar in the canned veggie aisle. Place 4 eggs in a tall 2 lb container with a lid (like those at the deli). Carefully pour beets and juice over the eggs. immediately wipe any spills to avoid stains. Cover tightly and gently shake or tilt to distribute juice and beets. Refrigerate two days, occasionally re-distributing the juice to fully soak the eggs.

Deviled eggs are always popular here. Miracle Whip and mustard (no measurements, just eyeball and taste test) mixed with the yolks is my stand-by, and DD won't allow me to try anymore variations.
 
We will do some potato salad with eggs, some pickled eggs...my fave! ...also an eggs benedict casserole where you use the eggs sliced... .very yummy tho not too healthy...surely you can google that. Chef salad.... good luck!
