What to do with banana peppers?

Other than stuffing them what are your ideas? I have so so many of them that I'm not so sure what all to do.
 
I put them in anything that I would use regular peppers in. I know what you mean about having a ton of them. I have them coming out of my ears! Some of them, I have cut up with my red and yellow and put them in the freezer for fajitas later. I have put them in meatloaf. My husband likes them on his sandwiches.
 

We usually pickle a whole bunch of them for sandwiches, pasta salads, etc. One of my fav lunches:Spread a tortilla with cream cheese, add salami, sliced olives and banana peppers. Yummy.
 
20-ounce can hominy, drained
14-ounce can black beans, rinsed and drained
14-ounce can pinto beans or garbanzo beans, rinsed and drained
1/2 large red onion, diced
3 tomatoes, diced
2 jalapeño or serrano peppers
1 green pepper
1 chile pepper
2 small sweet peppers or banana peppers
2 cloves garlic, minced
1/4 cup red wine vinegar
1/3 cup olive oil
1 lime, juiced
2 teaspoons kosher salt
1 teaspoon ground black pepper
1 teaspoon oregano
1/4 cup cilantro, finely chopped

Add all ingredients to a bowl. Mix thoroughly. Refrigerate two hours. Just before serving, stir in avocado chunks, if desired. Serve.
 
SO glad to see some suggestions! We too have way too many to use! But my favorite thing I've been doing with them is from a restaurant in Chicago called Piece. It's a homemade pizza - buy or make a crust, put on pizza sauce slices of italian sausage and rings of banana peppers. Top with mozzarella. AWESOME!
 
We never grew banana peppers, but Anaheim peppers. I think they're similar. I put them in chili, on pizza, sandwiches and in taco salad. . .in regular and pasta salad too. They are good even in omelets or quiche. So yummy! I know people who stuff and grill them, but I've never tried it. Sounds good though!
 
I use them for stuffed peppers- the longer shape means faster and more even cooking. It is super yummy.-

We also use them almost anywhere we'd use a bell pepper. Our favorite "recipe" though is zucchini (sp?) boats. Hollow out a zucchini to make a boat and steam the boats. Cook up the zucchini insides with banana peppers, tomatoes, seasoning, and eggs. Put in the boats and melt cheese on top.

Wish our garden wasn't all gone. That's one of my favorite summer breakfasts.

I pretty use them for anything I would use regular (bell) peppers for! I also will just grill them by themselves and eat them! My favorite is on grilled sausage with onions!!
 
Stuff them with cream cheese mixed with shredded cheddar wrap some bacon around them and smoke them or bbq them on very low temp....yummy, we usually do this with jalapenos but we have had a lot of the yellow peppers this year too!!
 
We love to slice potatoes, tossed with a bit of oil & some salt & pepper. Spread them on a cookie sheet & sprinkle with chopped banana peppers. Bake until the potatoes are done. It jazzes up the potatoes with some spice & tastes really yummy!!

I also make pizza quesadillas:

Spray one side of a tortilla with non-stick cooking spray. Place sprayed side down in a skillet. Top with pepperoni, sliced banana peppers, & mozzarella cheese. Spray one side of another tortilla, placing on top with sprayed side up. Once it begins to brown, flip it (usually the hardest part because the stuff inside wants to fall out). Slice serve with warm pizza sauce for dipping. My kids love these!! There a quick supper too!
