I'll be spending 1 day alone (including the evening) while my husband works. Any advice on hanging around the parks alone? Which rides? Where to eat? What to see? Thanks!

Ooooooooohhhhhh.... the possibilities! I would meander around Epcot or Magic Kingdom. Go on the rides you want, people watch and maybe just snack through the day (I'm not a big fan of eating by myself) Have FUN!

As someone who frequently visits solo, believe me you can have a lot of fun alone in the parks. I'd just do your favorite things, the ones that you love. I tend to like to hit the thrill rides more than the dark rides when solo, because dark rides are more of a shared experience. I'll single rider Test Track a ton! It's amazing how much faster one person can move through he parks too, even just compared to two. You can do anything you want to!

If you do want company and want a sit-down lunch or dinner, Biergarten has communal seating. It's a fun way to meet people if you want. Epcot probably is the best park to solo, however they can all be a great time.

I have been a few times alone, even camped at Fort Wilderness. I threw a futon mattress in the back of the truck and slept like a baby :) You can seriously see a lot and do a lot alone. I saw quite a few things I never noticed because no one was saying, look at that Grandmom! ( Though I did miss those happy faces) Single rider lines were great, and even at 7dmt I got to jump in early to fill a spot. I lunched at BOG and walked all around in there. Absolutely had a blast.
So just let your feet guide you around, check wait times and get in line if it's quick. I even went to see Cinderella by myself. It was fun!
Headed to All Star Music tomorrow with a friend for an overnight stay with two days of park hopping!
Have a great time!!

Sounds awesome. I did a solo day by the pool eating and drinking from the pool bar. Also took a stroll around the resort. Really enjoyed myself! You could also make it a spa day at Grand Floridian.

Outside the parks, depending upon what you are into:
sports: golf, mini-golf, fishing, marathon, bowling, ESPN Club, WWS/ESPN Zone, etc
shopping: DTD, area outlet malls, large scale malls
drinking: Jellyrolls, Raglan Road, monorail tour of resorts, walking tour of resorts in the Boardwalk area
movies: DTD 24 screen theater some with meals served by waiters
night clubbing: Jellyrolls, Atlantic Dance, Raglan Road, Citywalk
resort tours: monorail tour of resorts, Boardwalk around the lake tour of resorts, horse drawn tour of FWC, AKL/AKV
offsite: Gaylord Palms Resort, Citywalk, swamp tour
eating: Formal GF 5* Chef's Table @ V&As

A day at the parks alone can be so fun! I find it really easy to get a fastpass for most things! One of my favorite Disney days was a solo day at MK. Slept in and was still able to get FPs for every ride (except SDMT and PPF)- start off with 3 in advance but you can get them 1 by 1 on MDE after that. They always seem to be available for a solo traveler if you're savvy with MDE! Grabbed quick service lunch and brought it to the Hub grass to sit and eat in the shade while watching the daytime castle show. Plenty of time to people watch, browse the shops, interact with streetmosphere characters, etc. Simply a magical day :)
