What to do on a non-park trip with 2 yo

My DH will be attending a conference at CS for 5 days in June. DD and I will be tagging along on the trip. We are not going to do any of the parks since we are taking a family vacation to WDW in the fall. I do plan on doing Blizzard Beach one day hopefully with the aid of SIL who lives in Tampa. I am looking at this trip as the trip to do all of the little things that there is never time to do on a "normal" trip. The only other things on my agenda are to check out POP and ASM to see which resort we want to stay in when we return in the fall. My DD will be 2 years 3 months old.
So what should we do? What are the little things that your family likes to do?
Is renting a mouseboat with a 2 yo feasible?
Looking for ideas!!
 
How about a trip to Fort Wilderness? Boat ride, petting farm, pony ride, playground and a sandy beach to play on.

Also DTD, they have a fun splash fountain, free chocolate:goodvibes , and a train ride.
 
Visit some of the other resorts. AKL has lots of fun and interesting activities all day (free for everyone). Lots of public viewing areas of the different Savannahs.

Visit the Monorail resorts and ride the Monorails--ask to sit up front of the Monorail.

Definitely visit Ft Wilderness. It has a campfire and free movie at night, also.
