Three suggestions.
One- Do a MK hotel tour. Park at the TTC, and ride the monorail around to either the Contemporary or the Polynesian. Hotels you can get to using the Monorail and the boat system include the Grand Floridian, Contemporary, Polynesian, Fort Wilderness Lodge (boat only), and the Fort Wilderness Campgrounds (boat only). I suggest making advance reservations at O'Hana for dinner at the Polynesian. From there, take the monorail to the GF, and take the boat to the Wilderness Lodge. Try to catch the boat from the Wilderness Lodge to the Magic Kingdom between 9:45 and 10:00. You'll be able to see the fireworks show above the castle, and they may even pipe in the music on your boat!
Two - Go to Downtown Disney Marketplace. Eat at Wolfgang Puck's Express, shop at World of Disney, Mickey's Kitchen, and the Disney Christmas store, and get a Goofy's Glacier for dessert: A frozen concoction that you can dress up like a disney character.
Three - spend an extra $50 a person to go to the Hoop-dee-Doo Revue. Expensive, but worth it, given you like ribs, fried chicken, strawberry shortcake, and REALLY corny jokes.
