What to do at night?

I'm a single mom, so my daughter will be with grandma, often asleep at the hotel by 8. I did want to have some time alone at night. What are some good things to do without leaving and driving somewhere?Not trying to get plastered or something, just some adult time.
 
There are a few options depending on where you are. Some of which include:

1) Downtown Disney is always great. Lots of things going on, lots of places to go and eat/drink/shop/relax and it's open super late.

2) World Showcase at Epcot. You can't go wrong walking around the World Showcase and there are lots of great places in each country to get a drink, plus you can take a stroll around and just explore leisurely and watch (what I think is) the best firework show on Disney property.

3) The Boardwalk. Walking around the Boardwalk at night is awesome (so I hear, I need to do it still). Super beautiful, plus they've got the sports bar, a dance club, etc. So that could be a really fun atmosphere too if you're into it.
 
The two putt-putt golf courses are open in the evening.
DTD-Raglan Road has evening singers and dancing that you can have a seat at the bar and enjoy.
DTD-House of Blues has concerts and next to the outdoors bar is usually a singer.
Boardwalk-Jellyrolls a dueling piano bar, Atlantic Dance is a dance club with bands/DJ, and ESPN Club.
PO/RS-Hee Haw Bob piano player and depending on if the crowd is into what is happening can be a fun evening.
All the resorts have at least one bar/lounge.

Have you done either of the Putt Putt courses? Are they pretty standard putt putt courses, or the Disney sprinkle pixie dust on those too, and make them the coolest courses ever?!

Actually thinking about it there are three courses at WDW. One next to the Blizzard Beach it is called Summer/Winter Land and two courses across the street from the Swan Hotel.
One that is a "standard" mini-golf course based on the movie Fantasia. The other is more of a golf course based grass course, that I have played.

Since you are staying at PO, take a boat to DTD, and enjoy those options would be a great evening.
