It does have a lot to do with how much you're willing to spend. Last year I spent around $300, not including the money I spent on pins.
I like the park exclusive CD's the best. I spent a little over $100 on them alone. Magic in the Streets, (the parade themes,) Festival of the Lion King, and Cinderellabration, all exclusive to WDW, and also the Cinderella soundtrack, and another cd, Fairy Tale Weddings just because it had a lot of my favorite songs on it, I don't think that was a park exclusive though
Some other things I bought were scrapbooking supplies, a journal, a photo album, and presents for my family.
The next time I go down, I'm limiting my pin buying to LE and / or special edition ones that are hard to find, for instance the ones for MVMCP, otherwise I can find them online, (E-Bay,) for a few dollars less.
So, to answer your question, if you want special Disney souveniers, get park exclusive and / or dated items.
