What time to leave for airport?

For our upcoming trip, we are trying out Uber for the first time. Not concerned about how long it'll take us to get to the hotel on arrival as we'll be under no time constraints. On the way home, however, our flight leaves at 7:30am (Tuesday, Aug 30th) from SNA. We'd like to get to the airport around 6am (we'll need to check luggage, get through security and find breakfast before our flight).

When would you request your Uber ride?
What is traffic like early Tuesday mornings?
How busy will security lines be at SNA around 6am?
Should we rely on Uber or schedule a shuttle/taxi?
Will it be easy to get an Uber XL that time of the day?
