If the park closes at 7, do they typically start around 6? Trying to plan....

Yes,they are "usually" lit at 6:00 and "usually" stay lit 45-60 minutes AFTER the Park closing time(except for Evening Extra Magic Hours nights when they usually turn them off immediately at the end of EEMH).
