We were on the Dining Plan last year as well & absolutely loved it. DH said he'd never go to WDW w/o it again. It's a lot of food, but it's nice having everything pre-paid & not having to worry about anything once you get there.
Anyway, here's where we ate last year (Mickey Ears are by our favorites) --
Breakfasts:
Chef Mickey's at the CR - I'd do it again, just because it's Chef Mickey's. However, DH wasn't impressed w/ the buffet & the characters seemed rushed. I thought it was fun place, though, & you really can't beat the setting if you have kids. In addition to the napkin-twirling & general "fun", our kids loved watching the monorail run through. This year, we're trying dinner.
Cinderella's Royal Table in MK - We LOVED it! This was our favorite breakfast. It was my DD's favorite character meal. I thought the food was really good; DH just thought it was okay (who knew he'd turn out to be such a food critic?

) The characters were wonderful! However, it's changing in February, so I'm looking forward to some new reviews. This year, we currently have a lunch booked, but I may cancel if the reviews aren't good.
Trail's End Buffet at Fort Wilderness - Typical buffet breakfast items, quaint & relaxing atmosphere, not very crowded. Nice value. I'd only do again if I were paying out of pocket.
Lunches:
Crystal Palace - This was another one we loved! Our very favorite buffet - lots of yummy selections. The characters were wonderful!
Dinners:
Boma at the AKL - Wonderful setting, unique items on the buffet (but still enough "American" selections to satisfy picky eaters) - the children's selections were quite good as well. The desserts were so delicious! I fell in love w/ the zebra domes. This year, I don't currently have an ADR here (because I'm out of days & TS credits), but, the more I think about it, the more I want to add it. It was the perfect "ending" to our AK day. We got there early & walked around the AKL, looking at the animals which our kids really enjoyed.
Hollywood & Vine in MGM - This is the restaurant we chose for our FDP. This year, we're trying Mama Melrose's. I've read mixed reviews for both places. However, neither DH nor I were impressed w/ the buffet at Hollywood & Vine, so we want to try something new. The "retro Hollywood" setting is cute though.
Liberty Tree Tavern in the MK - This was our very first meal at WDW, and it was the perfect introduction to Disney World! The characters were wonderful, and the food (except for the mac & cheese) was really good too! The Declaration Salad was my favorite!
'Ohana at the Poly - This would have been better had we not had to wait over 45 minutes (and this was w/ an ADR). Our table had a nice view of the castle, and the food was good. Our server was a little snooty about bringing our kids something they would eat but then, later, he made up for it by bringing them several little paper umbrellas. This one is a lot of people's favorite, but, w/ the menu changes, I left it off our list this year.
PSB Dinner at Akershus (Norway) in Epcot - Lovely setting, good character interaction, but we didn't prefer the food. This year, we're trying breakfast here.
