Tex-mex Spinach Dip (as requested for every party)
1 can rotel (diced tomatoes with green chilis)
10 oz. frozen spinach, drained and squeezed dry (or use fresh, a giant handful chopped fine)
1 brick of cream cheese (softened)
1 pkg (16 oz) monterey jack shredded cheese
mix it all together in a greased (cooking spray works) casserole dish, bake at 350 for approx 35 minutes, serve warm with tortilla chips. HEAVEN!
Maybe keilbasa in the crockpot too, yum!
