Oh, what a great idea! No kids! Of course, I suppose in the eyes of your parents, there actually WILL be kids there (you!).
I haven't seen the new version of the Laua, but saw it a few years back and can say that if it's something they've always wanted to do, without a doubt, book it. I went to the Laua as part of my first trip as an adult. It was something I'd always wanted to do as a kid, and I'll never forget the experience, despite being thirtysomething when it finally happened (I'd been to Disney as a kid, but never an overnight trip. And the Poly had always been my dream resort).
OK, let's see, other "don't you dare miss it" things: I don't know when you're going, so it's hard to say as far as special events which might be going on in the area.
Restaurant wise, I'm a huge fan of taking people to the 50's Prime Time over at MGM. Especially people who like a little bit of interaction with their meal! And if they like characters, definitely go to a character meal... my first experience with a character meal was as an adult, with my friend Eric, and I was sure we'd look (not to mention feel) like idiots. I had no interest, truth be told, in a character meal. Well, we went to the buffet over at the Crystal Palace and I fell in love with the whole event. In fact, I'm going to be back to visit Pooh and his pals at the Crystal Palace... hey, a week from today! Woo-hoo! The food was great, and this non-character-lovin' guy found himself having an absolute blast (and there are photos to prove it!).
Another thing you might think about arranging is a carriage ride around the grounds of Port Orleans, Riverside (followed by a cocktail in the lounge, where you can be entertained by Bob Jackson... just make sure he's working that night).
Another fun thing to do is head over to Fort Wilderness for the campfire/smores/movie. Maybe after hitting the old fashioned, rib-sticking, simple-but-yummy food at Trails End Buffet.
Make sure to let the various CM's you deal with know that it is their 30th anniversary. You never know what might happen... heck, they could wind up serving as grand marshall of a parade or some such thing!
Hit pleasure island. Even if they're not club people, they'll no doubt have a fantastic time at The Adventurer's Club, which is a must-see for many, many people (including myself). I also love spending a day hopping around to the various resorts (especially Grand Floridian and Wilderness, which are just so beautiful, no matter what time of year).
