What kind of cheese does not need refrigeration?

Putting together a wine & cheese basket for a fundraiser tomorrow & I have everything except the cheese.

What kinds of cheeses do not require refrigeration & do you pair it with red or white wine?

Young ripened cheeses, e.g. brie, edam and Camembert, are good for a week without refrigeration. Generally, the more aged the cheese, the longer it will last at room temperature. A safe bet for wine would be something white and dry...only feta and Gouda are usually paired with red :)

Thank you!! Would you say that Brie is likely more popular? This is not a foodie crowd ;)
 
Is there a way you could maybe have a little basket within the basket that has an ice pack so you could keep cheeses cool?
 
Cheeses are best served at room temperature....much more flavorful.
 
Yes. The point is it can be out at room temp and be fine. Just put the cheese in the basket last and it can sit there for the night.

Yea but lets be honest, I would not bid on that, lol.

I think going with a cheese wheel sealed in wax would be a better option.

Hickory Farms does sell their cheeses in wax, so that is another option.

Now that I think about it, there are a ton of options at my grocery store with cheeses in wax.

brie in the wood wheel would work too...
they sell the irish cheddar in the wax paper type packaging.

I would go with labeled cheeses so people know exactly what it is.
You could throw in a pepperoni or soppressata.
 
Laughing Cow. But I have no clue if it is real or if it is "cheese food". It's sold on a regular shelf.
Laughing cow is in the refrigerated cheese section of the stores here, but that may be more because that's where all the cheese is. Their website says it needs to be refrigerated "once you get it home"
 
Is there a local cheese shop you could include a gift certificate from - or even a gift certificate from the local grocery marked "yours to select your cheese preferences" as not everyone likes every cheese - just a thought
