Epcot is a bit harder, but these are the MUST HAVES every trip...
Dark chocolate covered pineapple at Karamell Kuche in Germany
Tabouleh in Morocco
Egg Rolls in China
Crunchies in UK
and a Mickey Ice Cream Sandwich just about anywhere!
There are so many to choose from. I am easily pleased. I am happy with popcorn or a churro at Magic Kingdom. In EPCOT, I like to try different things on every trip, but I am still a fan of popcorn.
MK- Ice cream cookie sandwich @ Sleepy Hollow
Even though the nutella waffle or the spicy chicken waffle at Sleepy Hollow are a snack credit on the dining plan, I'm definitely going to try them both.
Epcot: Caramel pecan shortbread and Caramel corn from Karamell Kuche in Germany.

MK: The ice cream cookie sandwich at the ice cream parlor on MS. I don't get the appeal of a dole whip I think it must be only my family that feels that way.
Epcot: Sweet pretzel at the Kringla Bakery
You're not alone! I am "meh" with them too. I am a pastry lover so anything like a (chocolate) croissant is a hit with me. Plus ditto on the ice cream cookie sandwich.
Looks like the single egg rolls at Adventureland eggroll wagon & Yak & Yeti counter service are a snack credit and the egg rolls at Epcot China at Joy of tea are also a snack credit but I believe you get 2 in their order. Wonder which ones are better or are they all the same just at different locations?
