What is your Easter meal planned to be?

Roasted chicken and stuffing, mashed potatoes w/chicken gravy, sweet potato casserole, rolls, salad and veggies. DD is making devils food cupcakes tonight (she's 5yrs old) . And then we'll frost them with homemade real frosting and add Easter spinkles.

Ham, Wild rice, Collard Greens, Corn. And Apple Pie with Van. Ice cream for Dessert.

Ham, sweet potato casserole with marshmallows, corn, black-eyed peas, deviled eggs, ambrosia, macaroni and cheese and strawberry jello pie for dessert.

We're grilling hamburgers and hot dogs, as well. I cooked the big turkey meal earlier in the week, so tomorrow we relax.

We had our Easter meal today at my mom's. We had baked ham, homemade rolls, boiled potatoes, salad, mac-n-cheese, corn on the cob, sweet potatoes, lima beans, green beans, devilled eggs, fresh veggies, cupcakes, and sugar and chocolate chip cookies.

Tomorrow, I'll probably grill some burgers.

Seafood salad, roast tenderloin, baked ham, red velvet cake, caramel custard...for about 140 people. I manage a small Yacht Club and we are doing Easter Brunch for our members. I usually bring leftovers home for SO and have a late dinner with him. (Bless him, he is very understanding about my job and we work around my schedule). But he does get to sample some great leftovers!

I'm having Ham, Candied Yams, Corn Casserole, Cole slaw & Matzoh ball soup (DBIL is Jewish but is now sick so he won't be here since I already bought the fixin's for the soup I might as well make it), rolls & Pig Pickin' Cake for desert. PM me if you want the recipe - it's so easy & fantastic!

Of course all this cooking is after cleaning my house top to bottom and working all night tonight until 8am Sunday morning. I hope they all appreciate what I'm doing.

DH has to work until 6:00. I'm taking the kids to see "Holes" a little later, and then we will go out to eat when DH gets home.

We are having ham, green beans, 3 "versions" of potato salad, brown and server rolls and banana pudding (which was also great for breakfast this morning ).

The 3 versions of potato salad:
I'm allergic to eggs so I have to make a bowl for me without eggs.
My sisters don't like onions so I have to make them some without onions.
My husband doesn't like celery so I have to make a bowl for him.

I think the largest bowl will be mine so I can have some for lunch tomorrow!!!
