Having travelled recently with my FIL and his wife, two recommendations are Boma at AKL and the Garden Grill at Epcot (which is not a buffet, but "family style" dining where they bring platters to the table).
Boma is fantastic. They have something for all tastes, and even the less adventurous in our group found it to be fresh and delicious.
Garden Grill is standard type fare (turkey, steak, pork and catfish with veggies, salads, breads, etc.) but also very tasty and fresh. The added bonus with Garden Grill is that it is a character meal with LOTS of character interaction and one-on-one attention, without being super noisy. This was good for us as FIL cannot hear that well in a room with lots of background noise. It's very laid back and we find the service there to be very attentive.
We did do Chef Mickey's for breakfast just with the kids, and found it to be good as well, but it was definitely noisier that either Boma or Garden Grill (in case that is a consideration for you).
