What is for dinner this week?

My goal for this week is to plan out what we will be having for dinner in advance. Maybe if I'm good I will actually use up some of the frozen stuff in the freezer :rotfl: yeah, obviously I'm not much of a planner.

So what are you making for dinner this week??
 
I plan to go through the cupboards this afternoon to find at least two meals in there. :)
Right now, I plan to have tacos, pork chops, coconut coated baked chicken. We'll get pizza Thursday because I'm having a meeting here. I'm tired of the old stand bys. Inspire me somebody and I'm officially off pasta as an entree.
 
I'm new to menu planning as well, only been at it a couple of months. Next week I have planned:

Monday: spaghetti and cheese bread
Tuesay: Shepherds pie (using shredded beed)
Wednesday: shredded buffalo chicken sandwiches
Thursday: no plan (bowling night and DH isn't home)
Friday: Sandwiches (ordered from a fundraiser)
Saturday: Jamaican Pork Tenderloin
Sunday: Beef Bourgunion (in the slow cooker)'

Plans changed already. Tonight's dinner, Teryiaki chicken has been moved to tomorrow. We can have spaghetti anytime. DD went out for the evening so we're having yesterday's leftovers-mac & cheese and bbq pulled pork sandwiches.

I currently have this Cheeseburger Soup in my CrockPot.

These aren't necessarily things that we're having this week, just things we like:

-Black Bean and Avocado Nachos
-Eggplant Parmesan
-Creamy Chicken Enchiladas
-Skillet Pasta Dinner
-Homemade Lasagna
-CrockPot French Onion Soup with some sort of sandwich, last time we had BLT's with it
-Chili with Baked Potatoes
-Mini Taco Bowls
-Stuffed Baked Chicken -I like to butterfly chicken breasts and stuff them with herbs, cream cheese, or really anything and bake it. Sometimes I also put some sort of sauce on top. Yum!
-Chicken Pot Pie
-Tuna Noodle Casserole
-Shepherds Pie
-Pizza Quesadillas
 
Honey chicken stir fry
shrimp orecchiette
tuna cakes with creole mayo
Ill come up with veggies and sides later , don't need either for the chicken stir fry as its a one dish meal.

They only things I know for sure I am making this week.

Ive got taco soup , venison sauce piquante, white beans and sausage in freezer .

Since it is Mardi Gras weekend , next weekend, I am sure there will be fried chicken and biscuits on the menu too , as it is tradition.

Please post coconut chicken recipe !!

I clean and dry pieces of chicken. I season them with garlic powder, salt and pepper. Then I shake them in a bag with Panko and coconut-like Shake and Bake. Put them on a baking sheet(I use parchment paper for everything I bake these days-it
s an economic/environmental trade when it comes to cleaning) and bake at 375 for about 40 minutes or until the pieces run clear. I don't use a wash, the Panko and coconut sticks pretty well. I use thighs and small breasts. It's good. The Panko makes it crisp and the coconut adds a sweetness to it. I LOVE coconut!! (forgot to say that the chicken has skin on.)

sounds easy peasy, I will do it ! I do the same thing with panko and macadamia nuts , heck I could add coconut to that too : ).

This week:
Sunday Crockpot chicken with noddles and white sauce. I will use the extra chicken for chicken salad for lunches.
Monday: Tacos (cook extra hamburger for tomorrow)
Tuesday: Sloppy Joes
Wednesday: Baked chicken and dressing (make extra)
Thursday: BBQ Chicken Wraps
Friday: soup and grilled cheese
Saturday: kids are having friends over - probably pizza or maybe BBQ (I shop on Saturday)

I have a little more time between work and evening stuff on Monday and Wednesday so I try to purposely plan to make extra to use on Tuesday and Thursday.
 
I am trying a new thing this month. I made a list of about 15 meals that we like, some new some standbys, and plan on shopping at BJ's as soon as the snow lets up for it all. Then hopefully I can go to the store for fresh fruit and veggies once a week and bread and milk/juice halfway through the month. My problem is running in for milk and running out $50 lighter. Doing that once or twice a week is killing my budget.

Chicken Cordon Bleu with creamy wine sauce, rice pilaf and veggie
Cheese enchilada's with rice and refried beans (from scratch)
Spaghetti and meatballs, bread, salad
rotisserise chicken, mashed potatoes and veggie

Dh is traveling so that's pretty much it for the week right now.

Shepherds pie with shredded beef? How do you make that? I like the idea of shepherds pie but I won't eat ground beef (or ground anything for that matter, it's a texture thing).

Would you share the recipe for the beef bourgunion too?
 
Today: Roast chicken in the oven now. Making green beans, mashed potatoes, biscuits and salad with it.

Monday: Sloppy joes (crockpot recipe) and homemade cole slaw.

Tuesday: Shake-N-Bake pork chops, scalloped potatoes, broccoli sauteed with oil and garlic, applesauce and salad.

Wednesday: Baked macaroni and cheese plus salad.

Thursday: Going out.

Friday: Pizza night.
 
I cooked yesterday for the week. This is what we are having

Today: Lasagna
Monday: Meatloaf
Tuesday: Chicken and noodles
Wednesday: Italian Beef
Thursday: Chili
Friday: Swiss Steak

I also made Chili Mac, beef and noodles and Shepard's pie for a funeral dinner on Monday.
 
Tonight I am sick with the flu (still!) so we had takeout. The coming week looks like this:

Monday: Vegetarian Chili with homemade buttermilk cornbread
Tuesday: Refried Bean Tostadas with all the fixings and sides of Spanish Rice and Black Beans
Wednesday: nothing planned, DH has grad school all night
Thursday: Eggplant Parmesan with homemade pesto bruschetta
Friday: Vegetarian tortilla stew topped with tortilla chips, sour cream, and Mexican cheeses with Mexican corn cake for dessert
Saturday: Ricotta Stuffed Shells with garlic cheese bread and salad
Sunday: Maybe homemade pierogi if I have time.
 
Tonight - Cheesy chicken casserole with broccoli and rice
Monday - Slow cooker pot roast
Tuesday - Leftovers/frozen items
Wednesday - Pasta night
Thursday - Costco rotisserie chicken and mashed potatoes w/gravy, salad
Friday - Teriyaki salmon and veggie stir fry, with rice
Saturday - no idea, probably eating out
 
This is my plan for the week, we mostly eat vegan meals at home.

Monday: Beetroot and brown rice patties with steamed veggies

Tuesday: Sri lankan vegetable curry (root veggies with cauliflower and broccoli) served with brown rice

Wednesday: Vegetarian mexican chilli served in lettuce cups

Thursday: Thai vegetable green curry with rice stick noodles (bok choy, carrots, pak choy, snow peas, shallots, wombok, green beans)

Friday: Mushroom and pea risotto or steamed vegetable dumplings with chilli sauce (haven't quite decided yet)

Saturday: Baked tomatoes stuffed with savory rice and salad

Sunday: Baked potatoes served with curried lentils and salad

I was searching online yesterday for recipes, since I have 4 beef roasts in the freezer. Most of them are for "leftovers". I'll cook it off in the crock-pot all day (probably with onion soup mix) and when I get home I'll pull it apart and layer it in a casserole dish with vegetables and mashed potatoes, baking it long enough to heat the veggies and brown the potatoes.

today: Ina Garten's weeknight bolognese
tomorrow: Ina Garten's lentil salad
tuesday: pappardelle with ricotta cheese and sauteed swiss chard
wednesday: roasted chicken breast, roasted potatoes and carrots

Wednesday-meatloaf
Thursday-salsa chicken
Friday-swedish meatballs
Saturday-chicken parm
Sunday-not sure. I have a baby shower so I will probably be full and my husband is working so probably leftovers for the kids!
