What is a new "must do?"

Hello everyone! I think the title of this post says almost all. My mother and I will be taking a mother/daughter trip towards the end of September. We haven't visited since 2012 and we both know that there is a lot of new things to offer.

We have a 4 day park hopper pass and will be arriving on Sept. 22nd and departing on the 26th. I'm 24 and my mother is 53 so there aren't any younger children with us. This will be my 17th trip to the world so I know some things that I have to see/do but I cannot wrap my head around all of this new stuff that is going on.

What do suggest we go see/do that's new and what can we just skip? My mother is all for making this an annual trip that her and I do since my father only wants to go to Las Vegas anymore and my husband has no desire to ever go to Disney.
 
I would say must do that's new since you've been is Be Our Guest restaurant! I think it really immerses you in the Disney atmosphere :)

We actually have dinner reservations there on a Saturday night. I couldn't believe it when it popped up as available. I grabbed it and not letting t go.
 
I would say Gaston's Tavern to add to that list.....
And the New Test Track....New Soarin
 

In sept since 2012 there will be a new soarin movie with digital projector and third screen. Animal kingdom will be opened nights, including a night safari with nocturnal animals added to the mix that includes a new night show (which one depends on if they fix the big one) plus some other lighting things.. Hollywood is missing the back half and most of it is starwars but there is a new fireworks show with "State-of-the-art projection effects, dynamic lighting, lasers and pyrotechnics light up the night like never before!" The current just fireworks version is pretty impressive if you like fireworks.

you missed frozen mania but there is some things sprinkled in with norway having a new frozen based ride and meet and greet... and it's september so food and wine + the MK halloween party is happening..

This is also your first over 21 trip.. lots of over 21 things around :) i'll let the pub crawlers recommend where to go for that scene..
 
Go to the PIXAR Short Film Festival at Journey Into Imagination. It looks dumb, but you'll be pleasantly surprised. Don't watch it on YouTube or read about it. Just go. It's the only attraction left at Disney I see people clapping at a movie screen.

The projection show on the castle, "Celebrate the Magic" started at the very end of 2012, so you may not have seen it last time - it is really amazing and worth seeing. It is shown about 15 min. before Wishes on the front of the castle. We try to see it more than once a trip, and I took video on my phone to see it again, so I highly recommend it!
