What has changed in the last 2 years?

The last time we were at Disney was 2014 and we are returning in November and just made our FP selections. There are some attractions I do not recognize and was wondering what is new and worthwhile for older kids to try if the attractions are new. Also, I noticed that I was not able to see Soarin at all. Is there a reason for this? One more thing is that we have park hoppers but are not sure of our second park until we are at the first park but I am reading that we should pick out our fp for a second park only. Is it possible to just wait until after we rode a ride at the first park and then using our mobile device add the next fp on the second park or does this not work or is practical? Thanks!

You probably picked another "tier 1" fast pass at Epcot, so then you can't get Soarin'. You can get Illuminations OR Frozen OR Test Track OR Soarin'.
