What good restaurants are NOT in the dining plan?

We are going to Disney over Easter and I just realized I did not make any dining reservations. Now I realize what a mistake that is and now am thinking my best bet is not to do the dining plan, my thinking is those restaurants not in the dining plan would be less crowded. Or is that just wishfull thinking??
Any idea's, anyone?

Where are you staying?

If you find you are having trouble finding places to eat, try resort eating places. They sometimes seem to fill up after the places in the park.

If you are staying at SSR, you have easy access to the DTD places. Also don't forget the Swan/Dolphin.

You need to get on the phone ASAP.

Staying at SSR will be quite an advantage for you. DTD has many places to eat.

I suggest when you call to check on ADR's, rather then make request. Give them a date and a time range and ask what WDW places are open. It may make the process go faster.

V&A and Bistro de Paris are the only two I know of that are not on the dining plan.
You might try the resort restaurants like Flying Fish (Broadwalk), Yachtsmen Steakhouse, or Citricos (Grand Floridan) are a few I can think of off the top of my head. I would call give them a day and time range then see what they can pull up.

The last time we went in 2005 we found if we called the day before or that afternoon we actually made out. It seems that quite a few people make multiple ADR for the same night at different places. Then they cancel the ones they don't want. So my DH is thinking he wants to do it this way again. He likes the element of suprise and enjoys trying new places. I think we are going to need a little fairy dust to make it work this time though. We are going 4/28 - 5/2
