What FP+ would you choose? Help.

We are a family of 4 going December 6-14th. Crowd level of a 4/5 according to EasyWDW. It will be Myself, Husband, Daughter who will be turning 6 exactly a month after we go and Son who will be 2 and 7 months. My daughter is very much into the meet and greets and its her favorite part and loves princesses. We are doing 4 character meals though, Crystal Palace breakfast, The castle, Garden Grill and Hollywood and Vine so that will knock a lot of characters out. But I know Anna and Elsa will be a must if we can get a fast pass. These are what I was thinking I would get. What do you think? Good choices yes or no? My son wont be able to ride a few of them but we can do the parent swap on those.

MK Day 1:
Big Thunder Mountain, Peter Pan, Mine train

MK Day 2:
Anna & Elsa, Enchanted tales with Belle, one other?

Epcot Day 1:
Test track, Nemo, Turtle talk with crush

Epcot Day 2:
Soarin, Malstrum, one other?

Hollywood Studios:
Toy Story Mania, Tower of Terror, one other?

Animal Kingdom:
Safari, Dinosar and maybe Finding Nemo?
 
It has been a while since I made our FP reservations but you may want to look into which parks have 'tiers' and which rides are in those. I know when we did Epcot The big rides like Test Track, Soarin and Maelstrom were all tier 1 and you could only pick one from that tier.
I believe Hollywood Studios was the other with tiers. The other big ride in that park that you'd want a FP for is Rockin Rollercoaster. Neither of your little ones will likely be able to get on that one though, height was 48" if I am remembering right...and it is LOUD. We rope dropped things we couldn't get a fast pass for but really wanted to ride.

As far as your choices, they look good, none of them stand out as rides you wouldn't benefit from a fp with, they all will have decent lines. The only thing I would reccomend which is completely individual is when you will be at a park for more than a day I like to split the park up so we aren't doing a lot of back and forth, wasting time walking to areas we already have been, ect. So if you can do your Soarin, Nemo and Turtle Talk on the same day, I'd do that. Personally we split Epcot in half, did half one day (inculding half the World Showcase) and half the next. Also, keep in mind the World Showcase opens at 11am, so any FP not in World Showcase would be best before lunch so you can spend the afternoon in WS.
I did the same with Magic Kingdom, did Adventureland, Frontierland and Liberty Square one day (and with our extra time did a little bit of Fantasyland). The next day we did Tomorrowland and Fantasyland and browsed Main Street a little, rode the train, and redid some rides we liked in the other lands.
 
I just made our fast passes a few days ago. I did not need Anna and Elsa but I was logged on and started making fast passes for our trip right at midnight when the window opened. We are going 10 days and Anna and Elsa were unavailable the first 9 days of my trip and it was gone for the last day of our trip by 12:03. Every blog I have read regarding getting Anna and Elsa fast passes says to start with the last day of your trip as most likely they are already gone for the beginning days. This is because the people that start their trip one day before yours can book their entire trip so they most likely already booked their fast passes which overlap into your days. Since your MK days are at the beginning of your trip I would definitely not count on getting the Anna and Elsa fast pass and think of it as a bonus if you do. Also, when it opens up it gives you options, A, B and C and D for times i think after you pick the 3 you want. If you want fast passes for the morning then pick the option with later times and then once confirmed go in and change each time to what you want. Your times can't overlap so if you pick the option for morning and want morning fast passes it will not give you times t choose from for the mornings to change to. Hope that helps.
 
Also, if you go to wdwprepschool.com she has a video of how to make fast passes and shows you which fast passes are beneficial to get at each park which I found very helpful. Your first MK day looks great except getting mine train might be difficult so I would have a back up. We couldn't get mine train until our 5th day when I tried to book. For HS you could do the disney junior show, the little mermaid show, or one of the stunt shows if you are looking for something everyone can do. For AK, we did Safari, Lion King show, and EE and will child swap with EE. Have fun planning.

For MK I would either get Buzz Lightyear or another FP for Peter Pan. Those are 2 rides where the standby line is a killer. boring and slow moving.

For Hollywood Studios I would get Frozen sing along if it is still offered
 
I thought Dinosaur was a little scary. Otherwise your choices so far look good.
 
For MK, I would suggest Jungle Cruise. At Xmas time, there is a holiday overlay with Xmas jokes. At Epcot, I would recommend the character spot and at AK - maybe one of the shows. I think your kids would enjoy FOTLK or Nemo.

Thanks for the advice. The MK day 2 is actually on Friday so the 6th day of our trip I just had it listed out like this but not in order so MAYBE there's a chance we'd get a A&E FP. I really hope so. We are also at BBB that morning at 8:15 and should be out by 9 so maybe there is a chance we can get in line early enough.
 
Question about order of selecting FP, should I select in order day by day like the first day we are there do that first ect, or should I choose the days with the harder to get FP+ first? I will be getting online at 12am on the 7th to start choosing. Here is my park order by days.

December:
Sun 6 - Epcot
Mon 7 - Hollywood Studios
Tues 8 - Magic Kingdom ( staying for MVMCP)
Wed 9 - No Parks
Thurs 10 - Epcot
Fri 11 - Magic Kingdom
Sat 12 - Animal Kingdom
