Our family has gone to Disney a couple times in the past few years. Last time, we went to Universal as well. We are thinking of a trip that will include a couple Dis days and a couple Universal days, but we would like a little more focus on what exists in Central Fla beyond the 2 parks. What are everyone's suggestions.

It really depends on what you are looking to do. There are tons of things to do here in the Orlando and Central Florida area. There are air boat tours, GatorSpot (theme park), beaches within an hour's drive (Cocoa Beach), NASA which has a great museum.

On I-Drive there are several attractions like Wonder Works, Ripley's Believe it or Not, etc.

It's hard to suggest things without knowing what you are looking to do really or age range of your kids and your overall interests. But like I said, there is a lot going on in the Orlando area. I don't think you'll have any issues finding something to do outside of the main theme parks.
 
Have you a car ? if yes then there are lods of things to do.

Visit a Fort at Christmas on Hwy 50 followed by a very good Airboat Ride at Midway Airboats a few miles further on Hwy 50 heading
for Titisville.

Picking Oranges & a Bus Buggy ride at Showcase of Citrus on Hwy 27 North towards Clermont .

Pontoon Boat " Nature Tour " at Blue Heron River Tours at Hontoon Landing ( 2317 River Ridge Road Deland Fl. 32720 )

Hollywood Drive In Golf at CityWalk (Universal)

Shopping at the outlet malls

Jet skiing on the lakes (highly recommend Makaio Watersports)

Kennedy Space Center

Wild Florida (animal park)

...and those are just a few ideas off the top of my head :).
 
We are also expanding some this year. We are driving down a day early and staying near Tampa. The next day we are going to Clearwater Marine Aquarium, my daughter wants to see Winter, followed by checking in our hotel at Disney. During our stay we are doing 3 days at Disney, 1 at Sea World, and 1 day at Kennedy Space Center. We have not decide what we are doing on our other day.
