What does this mean?

On the actual Disney website for "Disney's Animal Kingdom Villas" FAQ DVC

it says:

"Most Studios, One Bedrooms and Two Bedrooms have a Savanna View. The rest have a Standard View, which includes a view of the pool, garden or parking lot. While Savanna View or Standard View room categories are confirmed at time of reservation, please note that Standard View room view preference requests are noted, but not guaranteed. "

So does this mean that when you book ressies, you don't know what view you're getting for sure(or for that matter, how many points you'll need/use)?

or does it just mean that you can book standard, get charged for standard (ie points), but you might still get Savannah? Or that with a standard view, you don't get to decide: pool, parking lot, or garden, they just make a note?

I really don't like all that Standard/Savanah/Concierge/Pool/Garden/Parking Lot...stuff.

That is your answer. The standard room is a guaranteed booking category, but the view within it is not, the view is a request.

That is true for Kidani.

In Jambo House, all standard view rooms have a pool view. The value category, which only exists at Jambo, has savanna, pool, and parking lot views. So at Jambo, a value view request is just a request. A standard room will be a definite pool view.

Though there are different categories of rooms, just be aware that when all is done, close to 80% of all rooms will be savanna view point cost rooms (with guaranteed savanna view as a result). Once Kidani is open, when you reserve, you will request either Jambo building or Kidani and your choice of building will be guaranteed. The standards at Jambo, as noted above, are all pool view. Thus, if in the future you request Jambo standard, you will get pool view; in other words requesting Jambo standard view room will guarantee a pool view. If you request Kidani standard, the view will be of road or parking lot, front garden, or pool at Kidani. You can request one of those and they will then try to give you that request but it is not guaranteed.
