What does stacking Max Passes..

It's not stacking MaxPass, it's stacking Fastpass. This is where you can have multiple Fastpasses for different rides. This usually happens when you pull a Fast pass in the morning with a return time in the evening. For example, pull a Fastpass for Buzz at 10am with a return time of 5pm. Then at 12pm pull a Fastpass for Star Tours with a return time of 5.30pm. Then at 2pm pull a Fastpass for Space Mountain with a return time of 6pm.

So now you have 3 Fastpasses stacked for the evening :)
 
We would do this with RSR and DCA rides. We spent the morning at Disneyland, then about lunch time I would get RSR FP for the evening since it would run out first. Then we would go back to the hotel to rest. While at the hotel I would get a new FP every 1.5 hours for another ride at DCA that was for the evening, getting the ones that run out fastest first. We would go back in the evening with up to 5 FP lined up and ready to go.

With MaxPass, you can get a new FP every 90 minutes. So, say you're in the parks in the morning and notice that RSR is going quickly. At 10am, you grab a FP for RSR at 5pm. At 11:30, you could then grab another FP for a different ride, say Soarin' at 4pm. At 1pm, you grab a FP for Incredicoaster at 3pm. Then at 2:30 you could grab a FP for something else, then go ride Incredicoaster, Soarin' and RSR all with FPs. Just an example, and it depends on how quickly the FPs are going for each ride that day!
