What does reserving "day by day" mean?

Hi, I'm totally new to DVC. What does reserving "day by day" mean? Do you call and reserve each day at the 11 month window because you're afraid if you wait to book the whole week at the 11 month mark of the check out date, you won't get the accomodations you want?

That is excatley what it means. I missed the week I really wanted in Dec adn had to do the following week and I did it day by day and had no problems.
 
There are not many instances where it is absolutely necessary to do day by day calling. I am a BWV owner and in the past when I stayed there over New Year's, we would call day by day for a standard view room. I have heard that it is the same for Grand Villas at OKW at many times of the year.

You would only do it if you are at your 7 or 11 month window and are booking at a particularly busy time. Here's an example:

Let's say you wanted to stay in one of the GV at OKW during XMAS (12/21-28). Assuming you own at OKW, you could book 11 months from the check-out date. You could wait (and take your chances) until 1/28 and make the call for the whole week, or you begin by calling 1/21 and make the reserveration for 12/21, then on 1/22 you make it for 12/22, and so on...

If you want Boardwalk or Standard view rooms at BWV during Food & Wine would be a good example of when you would want to reserve day-by-day. Very popular times for DVC members especially.
