Actually, I don't actually use the flank steak like Boma does. I usually get the sirloin when it's on sale, beat the tar out of it & then marinate. I guess many people wouldn't marinate those either, but I've never been a big fan of beef in any form. This changes the taste enough to satisfy me & the family loved it at Boma so they don't complain.
It's more of a paste/rub than an actual marinade - meaning it's not soupy. I don't always marinate for the full 24 hours, but it's best if you let it sit for at least 5 hours.

FLANK STEAK MARINADE
from Boma - AKL
for 3lbs of steak
1/4 c Ginger
2 Tbl Garlic
2 Tbl Sugar
3/4 tsp Cardamom, ground
1/2 Tbl Coriander, ground
3/4 tsp Turmeric, ground
1/2 Tbl Thyme
3/4 tsp Crushed Pepper
1/2 Tbl Worcestershire Sauce
1/4 c Soy Sauce, low sodium
Mix all ingredients in a large bowl. Add flank steak and marinate for 24 hours.
