What do you have for lunch?

I need lunch ideas for me. I'm tired of fast food, but hate making lunches for just myself. Any suggestions?
 
Usually Weight Watchers meals with fruit....
 
I general just go for a quick packaged thing I can heat up- a can of raviloi, a frozern personal pizza or pot pit, a package of ramon with vegtables, or soup. Unless I have leftovers than that is what I get.

Frozen packaged food, leftovers, sometimes I will get sandwich stuff.
 

depends on the day...sandwich, veggies, soup, every once in a while left overs... canned pasta too..
 
I'm trying to get away from the frozen stuff, I suppose we can do leftovers on occasion but some stuff just isn't all that fab the next day.

I'm a big left overs lunch person. I try to make a lil' extra for it. Last night I made beer can chicken, today is waldorf chicken salad sammie for lunch...

My lunch list is:

Soup
Sammies
Salad
vanilla yoghurt w/ fruit and nuts
bagel
veggies and dip
 
I am a soup person. I make a batch or 2 of soup every month and freeze them in individual plastic bowls. It only takes me an hour to do 10 servings. Right now I am on a Maryland crab kick but I replaced the crab with chicken and baby shrimp since I don't like using processed food and steaming and shredding crab is just too much work! I steam the chicken until its really soft and shred it like the crab would be.

Whats great about it is that it is fresh (as in non processed) and easy for lunch. Today I have a bowl of that and an apple. And they can stay in the freezer for a long time so you don't need to eat soup every day.

just the name sounds yummy!

i am terrible at this. i go days with no lunch. i usually have a yoggie or a sugar free jello! hardly ever have have a normal lunch. so i'm no help.
 
Holly I'm the same way, typically I graze for lunch because I just don't want to prep something just for me.
The boys have decided to take lunch to school every day too so we are working on that menu as well. I bought DS12 a snack attack cook book and a Disney Magic Kitchen cookbook for their lunches.
I think I need to join a few more recipe swaps too. I finally found page protectors for those!
 
Wasn't someone doing bento boxes last year? Those were really cute, but way too much work...no star shaped sammies here :) But DS16 wanted one in the worst way! He is all about Japanese, and anime...

The Waldorf Chicken salad is really easy, but it's sweet/tart, just so you know. I just have the ingredients, and DH is home today, so I'm making something special for lunch. I got the recipe online somewhere and adapted it a bit. I'm a "pinch of this, handful of that" kind of cook, so not exact measures, but you get the idea...

Waldorf Chicken Salad

Ingredients:
bout 1 cup cubed cooked chicken
1/2 tart apple, chopped
2 celery stalks chopped
1/3-1/2 cup mayonnaise
handful or so raisins
chopped pecans, toasted (Today I have honey roasted almonds)
splash apple cider vinegar
lil salt
lil ground nutmeg

Directions:
In a large bowl, combine the ingredients. Spread chicken salad over bread, or potato rolls. Top with lettuce if desired.

that was me too. The boys wanted to take lunch to school but I can't get out of my own way long enough to make menus far enough in advance for it. We are working on that today since they are all home sick. Right now I've ripped my pantry apart to build some new shelves.
 
I am a very bad lunch eater. I too don't like to make something just for me. If I don't have salad fixings in the house -like today - I graze. Today I had a sourdough pretzel, bag of pre-sliced apples & a slice of chedder cheese. Some days I just have cereal. :rotfl:
 
i love cereal. i have it for dinner sometimes too. when the boys are having something i don't like.
 
I have salads most days. There's a salad bar at work, but I got tired of them not having the things I liked best so I started making my own. It's a lot of work preparing, but I try to make 3-4 days worth at a time so it's not so bad. Putting them in tupperware/gladware keeps them fresh for up to the 4 days.
 
I love cereal as a meal too!

Generally for lunch I will have salad and fruit. In the beginning of the week, I will make a big bowl of salad and diced up some fruit. This week DD is on a strawberry and blueberry kick. After a few bites of mashed potatoes and pork she got herself a HUGE bowl of blueberries and ate it like cereal without the milk. :rotfl2:

On occasion, I will have leftovers. If we have something left over, ie, steak, chicken, pork, it gets chopped up and put in the salad fresh when I plate up the salad for lunch. Leftover pizza always goes to DD as I generally only eat that at my crops.
 
I usually have a sandwich (ham, or turkey, or bologna, or chicken salad) and some fruit, or a salad with whatever we happen to have on top, or leftovers.

When DS took his lunch to school, it was easy because he wanted the same thing every single day -- chicken breast sandwich, an apple, bbq chips, and a bottle of water. He was quite happy with that and ate it everyday for lunch for 2 or 3 years!

If I'm home, I usually have either:

*A half of a sandwich with a piece of fruit or side salad.

*Or, fresh apple slices with peanut butter spread on them (one of my fav's!)

*Or, leftovers

I think I'm going to try to make a couple of different kinds of soup this weekend and freeze in single servings for quick lunch preparation for the next month.
 
I can't think of anything the others haven't mentioned. The few leftovers I really like are beef stew and soup. When I make stew for dinner I always have some leftover and I freeze in individual containers. Same with soup or chilli. Just heat and eat.
