What do you do in Grand Cayman?

I do not want to book any excursions through DCL and last time we did Stingray city and the coral reef with Captain Marvin's.
I was hoping to just do a beach day somewhere, preferably where you could also snorkel. I am thinking maybe somewhere on Seven Mile beach. Does anyone know if any of the hotels offer as day package where you can use their facilities? or is it possible to book a room there so you can use them?? I will have four kids, plus DH and my mother. Youngest will be only 11 months at cruise time, so I don't want to find myself "stuck" somewhere for a set number of hours without means of finding shade or transport back to the boat if needed.
Any other suggestions or ideas would be greatly appreciated.

Last week the Capt. MArvin shuttle bus driver asked if anyone wanted to be dropped off along 7 mile beach after the Sting City trip. We said yes, and he recommended the Holiday Inn beach. They have an open air bar right on the beach that also serves food (sandwiches, conch fritters, etc). We spent a couple of excellent hours there with our kids (8, 6, 2 1/2), swam, nice sandy beach, ate. There are always taxis there to bring you back to the boat or the shopping area (negotiate on the price as there is also a public bus stop right - 50 cents or something like that for a ride back).
