I would imagine a park the size of WDW there's just too much ground to cover and too many things to do to go around overpacked.
The DH and I are planning our trip in February. Based on Momof4girls' description of what sort of clothing usually works for her family in December, I'm thinking we'll probably get away with just using a small messanger bag or fanny pack and a bit of layering if necessary.
Back to the original post, I can only suggest that you take it day by day and pay attention to the weather forecast for the day. Based on that determine what you need to pack to the park.
