Our plane lands at MCO at 4:59 AM. I'm guessing we will get to the resort around 7:00 Am. What can we do?

Have breakfast. Play in the arcade. Take a nap by the pool.

yep have breakfast then go to the park should good then head back to your hotel when your room is ready for a well needed nape then back to the park.

If you're staying on site, check if it's an EMH morning at any park. EMH starts at 8am most of the year.

check in online and request that your room be ready early.
i wouldn't expect it to be ready as soon as you get there but maybe after a leisurely breakfast it will be.
if its not after that then head to a park or disney springs.

Yes, but DS buses don't start running until around 8:30-9, and shops start opening at 10.

However, if one were to get to DS early, Characters in Flight opens as early as 8:30, and there is a substantial discount on flights earlier than 10am. The water taxi boats start running at 9.

OP - We do this often as we take red-eye flights to MCO from the west coast, usually arriving in Orlando between 5 and 6am. One time we flew on the night when the time changed so we gained an hour and got in just after 4am!
What we do is head to our resort, check in (unless you got the skip the front desk option), have breakfast, and head to a park until mid-afternoon. After dinner at our resort, we make it an early to bed night in order to be well-rested for the next day's activities.

I think bags start getting picked up at 5am? If you are chancing that the luggage delivery service will work for you and you tag your bags, be sure to pack stuff for that entire first full day in a carryon bag, so you're ready for whatever you might need. Want to swim? Have your swimsuits and some sunscreen (I decant sunscreen into 100 mL bottles and put them in our 311 bags). Want to have a nice lunch and want to look nice? Make sure you have some clothes, shoes, a hairbrush, etc in the carryon. Etc.

But I'm not sure how luggage delivery works with a 4:59am landing... :)

And maybe it's later anyway.

I believe you are correct that it's 5am for luggage on DME. On most of our early arrivals, we've rented a car and retrieved our own bags.

Re the 4:59/5 am rule - by the time the bags start coming off the aircraft, it will most certainly be past the 5am (cutoff? opening?) time.

The 10:00 pm rule is because the people who deal with the bags upon arrival have to stop working at a certain time.

As long as your flight does actually land in the vicinity of 5 am, you'll be fine.

Hopefully. But if it were me, I'd check with the DME folks upon arrival just to be sure.

Tag your bags.....sure, the DME luggage service doesn't officially start until 5am, but in all actuality? A flight landing at 4:59am, isn't going to be at the gate until close to 5:10. DME luggage people will be there.
When you get to your resort, your room may very well be ready. If you do on-line check-in and tell them what time you're arriving, you could get lucky. Whether or not it's ready, go get breakfast and then head to a park.
