What do I do with Chicken Breasts...boneless

Not very healthy, but I LOVE THIS:

Buffalo Chicken Dip.

Boil 2 or 3 chicken breasts. Let cool. Shred. Stir in some Frank's Red Hot Sauce...to taste.
Mix 4 oz cream cheese with 1/2 jar Ranch dressing.
Can either layer everything in small baking dish or mix together. Sprinkle with Monterey Jack Cheese and Bake at 350 for like 20 minutes.

If I'm going to a party, I use 4 chicken breasts, one whole cream cheese and 1 jar ranch dressing.

Brown chicken breasts in olive oil. Sprinkle Good Seasons Italian dressing mix over chicken. Add slices of green pepper and a jar of spaghetti sauce. Bring to boil, reduce heat, and simmer 25 - 30 minutes. Serve over pasta.
 
slice chicken into stripes
fry in olive oil until done
make rice
Green Giant Corn w/butter

place rice in the middle of the plate
place corn w/ butter on top of rice
place chicken stripes on corn

use light Ranch on top.

might sound strange but it's good.

Just made this for the 1st time last night as I needed a quick prep meal using chicken.....and it was yummy!!!

-Cut chicken into cubes...put into a baking dish
-Sprinkle chicken with your favorite seasoning
-Add 1 can Cream of Mushroom (or Cream of Chicken) I use the Healthy Request
-Add 1 can of Cream of Cheddar (or you can add regular shredded cheese or no cheese)
-Add 8 oz of sour cream - I use light sour cream
-Mix all together in the baking dish with the chicken
-Add crushed Ritz crackers or crushed croutons -enough to cover the top....sprinkle with melted butter - use as little or as much as you like....
-Cook for approx 45 minutes at 350 degrees
-Serve over egg noodles/rice...whatever you choose.

When I get a good deal on chicken breasrt I always poach some in water , then dice and freeze in a zip loc bag. Then I use the diced chicken for other quick meals like chiken quesadillias, chicken salad sandwiches, chicken w/ noodles, various chicken casseroloes even chicken soup!
 
I butterfly the breasts then pound them out. Take a nice tart granny smith apple and slice it up nice and thin toss the apples in cinnamon and sugar stuff them in the middle of the chicken breast and coat the chicken breast in the unseasoned bread crumbs seasoned with just a touch of the cinnamon and sugar. Bake in the oven until chicken is cooked through and crispy outside. A little bit before the chicken is cooked I make a chedder cheese sauce with milk butter and shredded cracker barrel extra sharp. When we plate pour a bit of the sauce over the top YUMMY! Easy yet looks like I worked hard. All you really do slice the apple and stuff it in the chicken.

I make a lot that are mentioned in this thread! Pretty funny! I do the chicken/salsa in the crockpot, but I add black beans (and sometimes corn), and then if I'm feelin' saucy I add a block of cream cheese during the last hour or so. Yum.
Another to try- chicken pot pie. Just cook the breasts, dice 'em, mix with veggies and cream-of-whatever soup and whatever seasonings you prefer, put this filling in a storebought Pillsbury-type double piecrust. Bake it. I also add goodies like cheese, bacon, mushrooms, whatever I feel like at the time. We also do a tasty chicken curry with apples and onions.
 
Here is an odd one.

Take chicken and cut it into bite sized peice and put it in a crock pot with a can of coconut milk and a little Thai red curry paste (you won't need much, the jar will last you about 96 years). Let it simmer all day Serve over rice with steamed spinich - its called Pra Ram Long Song.
 
DH likes to cut the chicken into bite sized pieces and cook it in a fry pan. Then he adds barbeque sauce. Quick and easy and good. If you have any pasta-roni (or other pasta and sauce dishes) you can add cooked pieces of chicken to that too.
 
ok...sorry to start another cooking thread...but the last few have been so helpful for great budget meal ideas. Now I have bought a bunch of boneless/skinless chicken....but I am sooo tired of the 2-3 meals I make with it....anyone have a few easy quick ideas???? I am in a major chicken rut!
OMG... hasn't anyone heard of "Corn Flakes"??? Take your chicken breast, coat in eggs and dip in crushed corn flakes and bake. It tastes just like fried chicken, but with out the deep frying. Oven Tem. 350 about 25 minutes. Even my pickey daughter likes this one. So easy, Soooooo good.

Can you tell me exactly how to poach? Do you boil the water? How do you know how long to leave it in the water? Sorry, I'm slow....
 
Poaching is sooo easy! I usually bring the water to a boil and then just boil for about 30 min. I always figure it will cook a bit more when I use it so I don't want to over cook it.

I used to poach for Chix noodle soup. So I'd cut and put in a can of Chix broth with it to freeze. Now I can chix and it's the best thing I've ever tasted for soups, casseroles, bakes etc.
 
I cook chunks of chicken with onion, garlic and add a big can of tomato or V-8 juice and frozen veggies and more spices and parsely flakes and let it simmer for a while. It's nice on a cold winter day. Sometimes I cook small noodles and add just before serving. The quickest and easist hot meal is to throw 5 frozen, boneless chicken breasts in a crockpot along with 3cans of campbells soups(cream mushroom, chicken, broccoli cheese). Let cook on low for 8 hrs. Sometimes I add some fresh cooked mushrooms or cooked broccolli cuts 30 min before done. Just before serving bake some frozen Pillsbury biscuits or make mashed potatos to put over. Very easy and delicous!
 
One of my all time favorites is Chicken Fahitas...my husband got me hooked on these many years ago and we still love them....very easy to make.

Steam boneless chicken breast in steamer for 30 minutes.
Cut up red peppers and red onion-
Add olive oil to wok or large fry pan....heat oil and add some cumin and salt to taste.
Cook veggies first to soften then add chicken (already cooked) to brown a bit.

Add toppings to your taste...Shredded cheese/sour cream/salsa
Wrap in a tortilla or eat alone! SO good you can't go wrong with this one!
 
Hey Caribear....I tried your chicken dish tonight. My oldest and I loved it; my hubby and son thought it was 'okay'. I'll be making it again!

I have a couple...

1. Place 3-4 breasts in glass dish. Pour in some Italian dressing. Bake 1 hour at 350.

2. Mix 1 1/3 cup instant rice with 2 cans cream of mushroom soup. Pour in glass dish. Spread out and top with 3-4 chicken breasts. Cover and bake 1 hour at 350.
 
My dd is a gravy fanatic, so I make chicken with my stroganoff recipe (w/o the sour cream). It's her fav. Saute chicken and onions in butter. Add water and equal amounts of sugar and dry mustard. Cook for a while :thumbsup2 . Add sauteed mushrooms, and 5 squirts of lemon juice to 1 squirt of vinegar. (Yep, vinegar!). Thicken sauce with flour/water.

I do roughly the same thing, but also add garlic while sauteeing (no sugar/mustard) and add artichokes with mushrooms and 3 squirts of lemon to 1 of marsala wine.
 
Having just rec'd a wok from Santa this year, I have used the boneless, skinless chicken breast with vegatables (onions, squash, zucchini, mushrooms, carrots, and I throw in a can of sliced water chestnuts for extra texture... yummy). I season with a little salt and pepper and soy sauce. My kids love this...even the veggies! Woo hoo!

The other recipe is a little more complicated. If you get some smoked sausage, you can make chicken and sausage gumbo. Fry off the sausage and chicken until browned. Take it out of the pot, put aside. In the same pot (after removing any grease from the sausage) saute an onion with a little finely minced garlic, and we like mushrooms, as well. Once the onions are clear add a can of chicken broth, deglazing the pot. Put the chicken and sausage back into the pot and let it cook down. Season to taste. (You might wish to make a roux before putting the meat back into the pot... equal parts butter and flour - maybe a tablespoon of each- that you cook in a seperate pot. You actually fry this off stirring constantly. Once the mixture is blended and slightly browned, you add this to the pot with the seasoning - prior to putting the meats back. This roux will thicken the liquid.) Serve over rice. This is something the entire family loves, too. Its a little more work but worth it.
