What do I do with Chicken Breasts...boneless

ok...sorry to start another cooking thread...but the last few have been so helpful for great budget meal ideas. Now I have bought a bunch of boneless/skinless chicken....but I am sooo tired of the 2-3 meals I make with it....anyone have a few easy quick ideas???? I am in a major chicken rut!
 
i cook them in the crock-pot and then use the meat to make several other meals.

Today we are having chicken enchiladas and yesterday we had chicken and rice and tomorrow we are having chicken chili.

Google cooked chicken breasts and you will get lots of recipe ideas.

Another idea is to marinate them and then just grill them either inside or outside.
 
Do you like buffalo wings? Put the chicken in a pyrex dish, cover with Franks Red Hot Sauce, cover with foil, bake for 30-40 minutes at 350. In the meantime, make some white rice and a veggie, then serve w/blue cheese dressing. (To make it super quick, make minute rice in the microwave, then micro a can of veggies too.)
 

I use them for Shake and Bake and they are great for Mojo chicken. Just marinade the chicken overnight in the mojo, grill and enjoy.
 
My family's favorite is when I take the chicken breast I put them in a foil pan (I don't like dishes...lol) Take the McCormicks Baja Citrus marinade (I use 2-3 packs depending on how much chicken)pour it over the chicken put it in the oven at 400 and I let it cook for about 40-50 mins (I also make sure to keep the top of the chicken moist with the maranaide) the chicken is so tender and flavorfull!!! It makes GREAT chicken sandwiches the net day too!!

They also like boneless chicken wings. I cut up the chicken to bite size peices roll them in flour, garlic powder, salt, and pepper mix and fry them. In a seprate pan I put on bottle of crystals hot sauce, minced garlic and butter let it simmer while the chicken is cooking. Put the cooked chicken and hot sauce in a bowl and shake to coat....it is sooo good!!:thumbsup2
 
When I buy boneless chicken, I separate it per the amount our family will need for a meal and put it in a ziplock bag, to that bag I add a marinade and let them sit in the fridge for about 8 hours and then freeze them. We use our grill all winter, as it sits right off our kitchen on our deck, so we have bbq, lemon, buffalo, italian, etc, chicken all year long and it's just as good in the winter as in the summer.

The easiest thing I do with chicken breast is to throw in the crockpot with a jar of salsa. You can eat it as it is (like with rice and a veggie) or shred it and make tacos, quesadillas or enchiladas.

DH also loves the Shake and Bake BBQ glaze, which is pretty easy too.
 
I take four chicke breast - put them in a glass pyrex dish - bake in the oven with a little Natures Seasons (my fav spice mix!) Then when they are done - I drain off the fat juice - then pour a can of cream of mushroom soup over the top - then a slice of swiss cheese over each piece of chicken - then the durkee fried onions on top of that! Put back in the oven to heat the soup and melt the cheese! Really easy dish! (If you like mushrooms - you can add one of the small cans over the soup and then put cheese on top of that.)

You can also do this with bbq sauce instead of soup - and use cheddar cheese and bacon - for a western chicken dish.
 
I butterfly the breasts then pound them out. Take a nice tart granny smith apple and slice it up nice and thin toss the apples in cinnamon and sugar stuff them in the middle of the chicken breast and coat the chicken breast in the unseasoned bread crumbs seasoned with just a touch of the cinnamon and sugar. Bake in the oven until chicken is cooked through and crispy outside. A little bit before the chicken is cooked I make a chedder cheese sauce with milk butter and shredded cracker barrel extra sharp. When we plate pour a bit of the sauce over the top YUMMY! Easy yet looks like I worked hard. All you really do slice the apple and stuff it in the chicken.

One of the favorites at my house is to cut up 3 chicken breasts into chunks and cook them thoroughly in a pan. At the same time, cook two boxes of red beans and rice mix in a pot on the stovetop. After 25 minutes the rice mix is done and its combined with the chicken. Let it simmer for 5 minutes and then serve. My sons love it.
 
cut up chicken breast into strips (tenders)...in a plastic bag add flour and put strips in bag...close bag and shake to coat....if you save pie tins these would work for the next part...in one dish put a couple of eggs and beat...in another dish/pan put dry breadcrumbs and mix them with parmesian cheese...

as you remove each piece of chicken from the flour bag coat it in the egg mixture and then in the breadcrumb/parmesian mixture....


preheat a skillet with olive oil and a generous pat of butter which will help with the high heat..I usually put it on med. to med. high heat.....add coated chicken to the skillet when butter has melted in pan and oil is ready for frying...fry until chicken is firm...make sure to turn chicken periodically so crust will not burn..

I usually serve these with potato salad and baked beans or french fries and a salad...

WOW, why did I think of that???? Love that idea.. I usually freeze my chicken breast but never with a marinade... interesting.

One thing I use a lot is boneless skinless chicken breasts! You can make poppyseed chicken, "homemade" chicken pot pie, chicken and yellow rice, Chicken and dumplings, and you can marinate it in italian dressing and either grill it, bake it, or pan fry it! I love chicken!!!!

This is my favorite chicken cutlet recipe too. I add chopped scallions to the butter mixture though. Apple juice can also be substituted for the wine. I've been making this forever and it's so good!:thumbsup2
 
I cook them and cut them up to add to pasta. I make an easy Chicken Parmesan by coating them in butter then a mixture of bread crumbs and parm cheese; bake and top with marinara and mozzerella. Another favorite it to coat them in crushed Ritz crackers and parmesan and bake; these taste especially good cold the next day! Oh, and you can do easy Cordon Bleu by coating the chicken in bread crumbs and baking, then topping with a piece of ham and swiss cheese and baking until the cheese melts.
 
Our new go to chicken breast meal is to cut the chicken into cubes, coat it with Mrs. Dash. Put a small amount of olive oil in the frying pan and make sure that I get a good crust on them. Take them out when they are cooked and place on paper towel to drain any excess oil

We then make up salad with romaine, fresh shredded parmesian cheese, croutons, onion, tomato, whatever the family wants. Everyone makes their own salad and tops it with the chicken. Very filling and healthy way to get them to get more veggies in the meal.
