What did you have for dinner last night?

I made shrimp scampi Wednesday night....OMG it was amazing!!!!! Last night we had leftovers. :) Served it with pasta and cut up sourdough bread dipped in dipping vinegar and had a glass of wine as well. So so so so good! :)
I used the recipe posted a few pages back. :)

Kerri, isn't that a quik and easy recipe, so happy you enjoyed it.
 
Friday: take-out pizza for DS13's surprise party.
Saturday: Baked salmon with dill, brown rice, steamed broccoli and carrots.
Sunday: Chicken parmesan over spaghetti. DH did most of the preparation, and it was delicious.
 
Sat: Chicken from Safeway and Mac salad
Sun: Olive Garden . Soup, salad and breadsticks

It was very easy and so good! I added some capers and (as usual lol) used more garlic but it's going on the short list of things to make at least once a month. :) Thanks for sharing that!

Let's see, Friday I had a chicken burrito, Saturday we had all you can buffet (steak, crab, shrimp, salad, etc) in Reno, last night I had a chicken taco.
 

Kerri, where did you go the buffet? GS or Atlantis?
Did you have a nice time?

We had credits at the Peppermill so we ate there, at the Island Buffet, it was good but we weren't happy with the oysters so we didn't eat them. lol We loved the crab and shrimp though, so good! I ate way too much. LOL

ETA, tonight for dinner I ordered pizza. LOL Pizza Hut, pepperoni and mushroom with breadsticks and cinnasticks, the $10 deal (plus a buck for the extra topping and $3 for the liter of Dr Pepper lol)

I made a loaf of bread, so we used the leftover salmon to make sandwiches. I also made an apple cake for dessert since we have a big box of apples we picked up in Apple Hill this weekend.

Well since we were staying at the Peppermill and had resort credits we just stuck with that. We only ate 1 meal away from the resort and that was at PF Chang's. LOL ;) I stayed at the Atlantis years ago, I remember enjoying myself but not enough to remember whether or not I'd like the buffet better. LOL ;)

I have never been to Apple Hill....but apple cake sounds good. :)

My brother is a big fan of the Peppermill. I'm with kylie71 though that I prefer the Atlantis buffet over the Peppermill one. It's been a few years since I've been to either though.

It actually only uses 3 apples. I've only made any headway with the box of apples because I made some applesauce at the same time.

Apple Hill was a nice diversion to get away from home for a few hours on a fall Sunday. We used to take the boys when they were really little but hadn't been back in six years. DS13 and DS11 mostly enjoyed the experience as an exercise in trying as many things with apples and sugar as they could, so we had apple donuts, dumpling, and strudel. We skipped cake since I make that and pie since DH will probably make one soon. We also stopped at the place that specializes in fudge and got a few pieces of that. So it was a sugar rush day. We had fun and it was nice to go somewhere different from home although it is very commercial and crowded these days.

I've wanted to go to Apple Hill but haven't made the time, my months get so busy and fill up so fast it's kind of crazy. I also have a pear tree so a lot of times I use apple recipes but use pears. :) thanks for the link, I'll check it out.

Last night we had cheese tortellini, garlic bread, salad and I had a nice glass of Moscato as well. :)
 
Last night we made burgers, mine was simple, just cheese, meat, bun, bbq sauce, red onion and pickles. :) Nothing on the side, just the burgers.
 
Last night was an easy night for me, we had twice baked potatoes. I just mixed in some ranch, bacon bits and olives and topped them with colby jack. Easy and delicious.
