Raspberry season has begun! My dad and I went raspberry picking and I made jam.

Tried out my newest cake pan. I made a spice cake which I frosted with cream cheese frosting. Check out the little Mickey's embossed on the cake.

Lemon Ice Box pie. Just a couple of ingredients: cream cheese, condensed milk, fresh lemon juice and lemon zest, & graham cracker pie crust (store bought). Delicious!

Banana Pudding Pie, from Cook's Illustrated. From scratch. Graham cracker crust, toasted meringue (more like a Swiss meringue) topping. This turned out REALLY good!

Took a strawberry cake I made out of the freezer and iced it with strawberry frosting to take in to work. Had used a box cake mix to make two strawberry loaf cakes a couple weeks ago so I froze one and popped it out last night. Got a lot of positive reviews. I didn't eat it as I dont like strawberry LOL.

Making chocolate banana muffins from dessert for two website tonight since I have a couple overripe bananas to use up. Only makes 6 muffins, super quick/easy, and one of DH fave recipes so perfect. Can throw half in the freezer if he doesn't eat them up by the weekend.

No bake lime pie….sorry I don’t know the official name but it’s simple. Evaporated milk, sweetened condensed milk, lime juice, vanilla and Maria cookies. Mix liquids together and layer between cookies. Yummy. I did 5 layers of cookies but next time I would do 4 layers to make it less cakey.

What a lovely looking meringue! Did you use a torch, broiler or something else to toast the top?
