I made Texas chili on Sunday or Monday (chuck steak on sale!) but no cornbread . Only one in the house and decided to bypass the carbs. Froze the chili for another day or so.

I make a simple syrup (2 cups water 1/12 cups sugar)
Let simple syrup cool
Cut up oranges
Cut two vanilla beans lengthwise and scrape the seeds
Mix the seeds with the simple syrup
Place oranges and pods in a bowl, cover with syrup
I let them sit overnight to work their magic
I get the vanilla beans at Costco. It is like $17 for 10, in case you have a Costco near you.
Tried out my new corer and mandoline shield to make cinnamon apple chips. I got impatient ... half burned and half were more like dried apples vs. crisps. I may try again this weekend.
Persimmon bread (James Beard's recipe). Had a ton of very, very ripe persimmons to use up and found this recipe via David Lebovitz. Used less bourbon, added cardamon, and sprinkled the tops of the loaves with nuts and sugar. In the oven now and the house smells great.
